Slow Cooker Taco Soup

This recipe is great! I used all black beans, pureed one of the cans of tomatoes slightly for the kids and added 1 tsp of honey since my corn was frozen with no liquid. For toppings we added cheese, cilantro, avocados. Very good!

Persimmon Bread II

I really liked this recipe! I used 1 1/2 cups sugar also and it was still pretty sweet. I also cut the oil in half and used applesauce. We always bake with Spelt flour (low gluten content) so I used that and it was great! I added vanilla as well and only used 2T water with extra permission pulp. Sprinkled sugar and cinnamon on top! Next time I will add cranberries.

Persimmon Cookies II

These were really good! I changed the white flour to 1 cup whole wheat, 1/2 cup almond flour (ground up almonds) 1/2 cup white flour. Added cranberries to part of the batch. They were wonderful without cranberries too. Used pumpkin pie spice with the cinnamon and added 1/2 t of ginger. Great texture!

Mom's Zucchini Bread

I love this recipe! I took it over to my parents house and my dad was raving about it. I did add 1/4 tsp powdered ginger to it and lightened it with some applesauce. I substituted 1/4 cup applesauce for the oil. I have been using this recipe for several years.

Elegant Oyster Soup

This was amazing! I had to change the fat content though. I just couldn't bring myself to put that much fat in my body and still enjoy... so I used olive oil to soften the veggies in the beginning instead of butter. I used half the butter with the flour mixture. I used part half & half and the other part I used 2% milk to total one cup. I left out the artichokes to save some money. It make sense to double it since it's better the next day anyway.

Fluffy Hot Chocolate

Since we use organic milk I tend to be a bit more conservative with it, so what I did was use 3 cups of organic milk and 1/2 cup water. Next time I'll add one full cup of water to make 4 cups of liquid in the pan. Also, next time I make it I'll only add 1 cup of marshmallows (it's very sweet!). I used 6 tsp of cocoa and a pinch of salt.

Japanese Ginger Salad Dressing

I loved this recipe! The lemon juice was amazing! The only thing I added/changed was added 4 teaspoons of sugar. Also, I used canola oil instead of olive. I used Tamari instead of soy sauce for richer flavor.
