Easy Sugar Cookies

Reviewed: Dec. 5, 2013
I wanted a cookie that would melt a little in the oven, and still be chewy. This is it! :) I melted my butter a little more than I meant to but I wasn't worried about it since the softer the butter the better. I wouldn't recommend melting it completely, but a little melt is okay. the dough is super soft and squishy, picks up sprinkles well, and it puffs a little in the oven. I take them out when you can just see a little light brown on the edges, and let them sit on the pan for a minute, where the puff settles and they are flat and perfect :) thank you!

Habanero Cookies

Reviewed: May 3, 2012
I brought these to work, and the miners LOVED them! I made them last night, and I threw some diced dried mango into the mix, because.. duh. mango goes great with habanero! anyways, there are some other store bought cookies here, havent been touched! haha. I wanted to let everyone know that because of the high butter content (awesome) they do melt out a bit IF you spoon them onto a hot pan. Spoon the batter onto cool sheets, and they will stay nice and round through out the baking :) I used the milk treatment on half of my peppers, and to be honest I won't next time.. they arent hot enough lol. They cool off a LOT after they are fully cooled. just fyi. great recipe!

Kung Pao Chicken

Reviewed: Jan. 19, 2012
I've been trying to make kung pao from scratch for years, and I've never *quite* got it.. but this recipe made a fantastic base! I used chicken thighs which give it that rich flavor and eliminate the need for cornstarch :P. I didn't use white wine, and I substituted stevia for sugar which worked just fine :). I separately quick fried my bell peppers, onions and celery in some coconut oil and added it to the chicken. I also quick fried some cabbage in coconut oil to put the chicken on top of. It was very good :)
