Jalapeno Hummus

YUMMY! I'm recently new to the hummus scene...trying to add healthy things to my diet. I purchased the store bought kind and it was ok, but I thought maybe homemade would be better and boy was I right! This was so good! I will make again, for sure!

Salsafied Chicken and Rice

I made this last sunday for lunch, it was great! I made a few changes: I didn't have instant rice, so I cooked 1 cup of jasmine rice in the microwave in 2 cups of canned chicken broth. While that was cooking, I browned 4 chicken tenderloins, that I had diced, in olive oil, then added 3 crushed garlic cloves. I added the rice to the chicken, poured 1/2 cup of broth, added salsa, then simmered on low. I used mozzerella cheese, I didn't have any cheddar on hand, and though the flavor was mild, it was still very good, hubby loved it! Will make againa and again, thanks!

WOW! I'm a huge "nanner puddin" fan, so I'd have to say this is one of the best yet! Very good and my whole family loved it, I suggest you double it if you want seconds! Thanks!

Irish Chicken and Dumplings

I made this last night for company and they adored it! I replaced the potatoes with button mushrooms, because I thought the dish would be too starchy with potatoes AND the dumplings. I also added some dried rosemary and thyme. Add a salad and some crusty bread, makes a fantastic dinner for guests! Thanks!

Asian Ground Beef and Pepper Saute

Me and my husband adore this recipe! I make it at least once a month. Instead of chili paste (because I can never find it) I use tomatoe paste and I add all the sauces until it tastes right to me. If it looks dry, I add chicken or beef broth. We love to mix the left overs with the rice and put in the fridge for the next day. Tastes even better the next day for lunch! Great recipe, thanks!

Grandma's Famous Salmon Cakes

I'm a huge salmon fan and I thought this recipe was so easy and very tasty. I made one change...instead of frying in oil, I sprayed a baking pan heavily with Pam, placed the patties, which I rolled in a bit of bread crumbs, onto the baking pan, then sprayed each patty with Pam. I baked in a 375 degree oven for about 20 minutes, turning once. they were golden brown, but tender on the inside and not one bit greasy. they were out of this world!

Honey Mustard BBQ Pork Chops

I made this, using everything but the tarragon, because I didn't have any and, I baked it in the oven instead of grilling...it was fantastic and my hubby loved it! I made a second time, except I dumped chops and marinade in the crock pot, let cook for 8 hours...the marinade made a yummy gravy which we served over rice, with green beans and cornbread muffins...outstanding!
