Cranberry Crumb Pie

I didn't care for this pie but with several tweaks it could be good. The crumb topping wasn't that great, I think I would omit the flour next time. The creamcheese turned gritty the next day. Plus there was so much of the cranberry misture left over. A graham cracker crust would have been better.

Chocolate Bourbon Pecan Pie

I made some adjustments based on other reviews and used: 1/2 cup of sugar, 2 TBSP of bourbon, then just a layer of chocolate chips in the bottom of the pie crust. I did not measure the chips. The chips didn’t melt which I guess was good for some. However, they did intermix with the filling. I think if I made again, I might use melted baking chocolate to line the bottom of the pie crust instead of using chocolate chips. I didn’t care for the filling all that much either. This pie doesn’t taste bad, but it isn’t one of the best pecan pies I’ve ever eaten.

Roasted Pork Loin

This was excellent with a few minor changes. I used a little more garlic, with fresh rosemary and instead of thyme I used Italian Seasoning. I used a food processor and made the paste, then rubbed it onto the loin that I had already put s/p on. I cooked at 300 covered with foil for 1 hr then uncovered and kept it moist by basting with the juices. In the very end I turned on the broiler to brown a little. I opted not to make a gravy with this. My husband and I loved it. Very tender, can't wait to make again.
