Low-Fat Apple Spice Muffins

I used 2 C Whole Wheat Flour, 1 Tbs Applesauce, 1 tsp fresh ginger (finely shredded), 2/3 C Chobani Vanilla Yogurt, 2/3 C 2% Milk, and 1 Lrg Green Apple. I folded the wet ingredients into the dry with a spatula and baked for 20 min. My elevation is 4,500 ft in an arid environment. These turned out wonderfully although next time I think I'll switch out the applesauce for a Tbs of pumpkin. Would love to see how that tastes!

Beef Tips

Thank you! Thank you! Thank you! I have a hard time cooking with beef (a "recovering" vegetarian, so my husband calls me) - and this was sooo easy! His facial expression after the first bite said it all. I used 1 1/2lbs beef, decreased the 2 C Water to 1 3/4 during the simmering period. The gravy did not end up as thick as he would have liked, but excellent nonetheless!

Brownies To Die For

EXTREMELY rich brownie. I didn't top it with anything and it was delicious. I turned the oven off after 20 minutes and just let it sit for another 10 as the heat was dissipating. Perfectly moist brownies.

Chicken Breasts with Herb Basting Sauce

Excellent chicken dish! I doubled the marinade, added two large baking potatoes cut into quarters, added a 1/2 stick melted butter to the baking dish prior to putting the chicken and potatoes in to bake, and served it with the "Salad with Artichokes". Excellent.
