Quinoa and Black Beans

made this to have for lunch all week, and it is awesome, healthy & hearty. you can also do what you want with it! for the non-vegetarians out there, you could probably throw some chopped chicken or steak in it to make it even more hearty. I used a can of fire roasted diced tomatoes, chicken stock, extra spices (including a bit of chili powder), and only one can of black beans--everything else as-is. I put a bit of chopped avocado and shredded sharp cheddar on top for serving... so good!

Chipotle Crusted Pork Tenderloin

very yummy & different. I LOVE spice, and this was perfect cutting the chipotle in half to 1.5 tablespoons. I think more and you will really narrow your audience down who likes this. we baked in the oven since the grill wouldn't start, and cooked it for twice as long at 350.

Moroccan Chicken

Easy, healthy, and very tasty. I added an extra clove of garlic, a yellow squash, and black pepper, in addition to heaping amounts of all of the spices with the exception of turmeric. It had a ton of taste, and I served it over cous cous. Great weeknight dinner!

Rubbed and Grilled Pork Loin

great flavor. decreased cooking time for a much smaller loin, and it was still great and very easy, the first time I made. Last night (2nd time), I even messed up the grill and turned the section on low instead of off, and it still came out great. Keep the rub around for other uses as its got a slightly sweet, slightly spicy flavor!

Lentil Soup with Lemon

I am obsessed with this soup. It is delicious, easy to make, and great for healthy & hearty meals. I have now made 2 times, exactly as written, with the exception of doubling the recipe (frozen portions for lunches!), and adding a bit more cumin and chili powder (and did not serve with extra EVOO).

Caesar Vinaigrette

Don't go in expecting regular caesar dressing (the creamy or vinaigrette kind)... but it was good and a bit different from the usual. I think the lemon zest taste was a bit off for me--next time I'll probably just do a squirt of fresh lemon juice instead. I also cut down on the oil--used about 1/2 cup instead of 2/3 cup. Use an immersion blender to emulsify it--we didn't have any problem with oil separation after that!

Asian Lettuce Wraps

seriously, delicious. we subbed fresh ginger for pickled, because that is what we had, but otherwise followed exactly. they tasted great. passed the recipe along to my mom, who also made it and received rave reviews!

Slow Cooker Chicken Mole

we thought this was great--very tasty, healthy and easy. i love mole, and although this isn't exactly what you get in a good restaurant, we still loved it. i did saute the onions prior to throwing in the crock pot, and added a tablespoon of the adobo sauce for a bit more spice and flavor, and slightly more cinnamon, cumin, coriander, and nutmeg. also added a bit of salt and fresh ground pepper. will definitely be making this again.

Beet Soup

This was an easy, delicious recipe. I doubled it, cut out the heavy cream and added a potato to make the soup a bit thicker, and served with some crumbled goat cheese. The goat cheese goes SO well with beets! I chopped the beets into relatively small pieces and had no problem cooking them in the time stated in the recipe. This also froze well! With the potato and doubling the recipe, it made 5 hearty servings.
