Like some of the other reviewers I have a fiancé who is a little skeptical of healthy dishes and he licked his plate clean! (So did I!) i cannot believe how tasty this was and I even turned it into a main dish by cleaning out my cabinet. I added 1 breast of chicken I had on hand (diced it and sautéed w the onion, marinated w some crushed red pepper flakes, garlic and pepper for a few hours prior), cut the recipe in half, used chicken broth instead of veggie, EVOO instead of veg oil, more than doubled cayenne pepper ( we love things very spicy), and use freeze dried cilantro bc that's what I had on hand. Toyed with the idea of adding a can of garbanzo beans but decided to try it without for the first time. May add them next time just to add some extra protein and bc I love them! Will def make the full amount next time and keep the leftovers for lunches the next day. 5 servings turned out to be 2 and between the crushed red pepper and all the cayenne, it was super spicy! Can't wait to make this again and again! Thanks so much for a recipe I can feel so good about!
