this was soooo easy & so yummy! i doubled up on the lime & cilantro & followed everyones suggestion by going with a top of the line salsa (went with the hot). i also added a can of black beans & chopped onion. you can make this extra healthy by using low sodium taco seasonings & low sodium black beans. the chicken was SO tender and so easy to shred! served it on whole wheat tortillas with lettuce, tomato, leftover rice from the night before, fat free cheese, fat free sour cream, and black olives. having the leftovers as a "taco salad" today for lunch!
