Quinoa and Black Beans

Reviewed: Dec. 13, 2013
Like some of the other reviewers I have a fiancé who is a little skeptical of healthy dishes and he licked his plate clean! (So did I!) i cannot believe how tasty this was and I even turned it into a main dish by cleaning out my cabinet. I added 1 breast of chicken I had on hand (diced it and sautéed w the onion, marinated w some crushed red pepper flakes, garlic and pepper for a few hours prior), cut the recipe in half, used chicken broth instead of veggie, EVOO instead of veg oil, more than doubled cayenne pepper ( we love things very spicy), and use freeze dried cilantro bc that's what I had on hand. Toyed with the idea of adding a can of garbanzo beans but decided to try it without for the first time. May add them next time just to add some extra protein and bc I love them! Will def make the full amount next time and keep the leftovers for lunches the next day. 5 servings turned out to be 2 and between the crushed red pepper and all the cayenne, it was super spicy! Can't wait to make this again and again! Thanks so much for a recipe I can feel so good about!

Boneless Buffalo Wings

Reviewed: Nov. 17, 2013
Incredible! I cannot believe I've had this recipe saved so long and haven't tried it. We go to the same bar for boneless buffalo tenders that we consider the "best" and first taste, my fiance said that these were even better! I think I may have even cut the strips a little too thick but they still tasted delicious. It helps to let the chicken cool on a wire rack for a bit before adding the sauce (will make them a little more crisy). I also doubled the sauce and used 2tbsp of butter... try Frank's! Soo good! this will be a new regular for football sunday!

Golden Pork Chops

Reviewed: Oct. 29, 2013
Oh my these were definitely one of the best pork chop recipes I've tried!! I didn't even realized I "screwed up" the recipe until later when I saw I was supposed to use golden mushroom soup instead of cream of mushroom. My fiance said... whatever I did, DO IT AGAIN. I also browned the pork chops (seasoned with salt & pepper) in some butter and the onions & mushrooms along with some minced garlic. I adjusted the recipe for 2 but still used a whole can of soup and upped the mushroom quantity by a lot (we love mushrooms!). Baked for 1/2 hour a little cooler for 1/2 hour (350 covered, flipped the chops and turned the oven up the last 10-15 minutes and uncovered. Making these again tonight and will experiment with some additional seasonings!

Chef John's Italian Meatballs

Reviewed: Jul. 19, 2013
After seeing that Chef John submitted this recipe, I knew it would be a winner! I've been searching for the "perfect" meatball recipe for a while now and I found it!! I've made these twice so far and both times, delicious! I only cook for my fiance and I so I cut the recipe in 1/2 and just used ground beef (95% lean). I also used whole wheat bread crumbs and organic fat free milk. I didn't have fresh parsley on hand so just used dried. I have basil growing in my garden so I threw in a handful of chopped basil and added a little extra red paper flakes because we like things spicy! Let them soak in marinara sauce for 10 min after they come out of the oven and YUM!

Slow Cooker Italian Beef for Sandwiches

Reviewed: Apr. 29, 2013
I don't comment normally unless I find a recipe that was to DIE for and this was just that! Oh my this smelled incredible when it was cooking. I followed everything pretty much exactly except I could only get a 3.5lb rump roast but I didn't scale the recipe down at all. I tend to always make extra juice. I also used a zesty Italian packet. Also I substituted onion flakes and salt for the onion salt. First time cooking for my boyfriends parents and everyone was blown away! My bf's mom was concerned that I wasn't running around in the kitchen but this was just so easy! I sauteed some mushrooms and onions and served it up on some toasted hoagie rolls with cheddar cheese and horseradish. Oh my I cannot wait to make this again! I suggest shredding up the meat 1-2 hours before it's done and let it soak in all that yummy juice! 10 hours is perfect.

Incredibly Cheesy Turkey Meatloaf

Reviewed: Oct. 18, 2012
This was delish! I added a few things to make it a little more flavorful though... of course added a ton of garlic to the meat mixture as well as about 3/4 chopped onion. I also way overdid it with the seasonings and added a little bit of dried basil & thyme... now for the real secret ingredient... sprinkled lots brown sugar on the top of the ketchup. So yummy and great for a fall dinner!!

White Chocolate Raspberry Cheesecake

Reviewed: Apr. 19, 2012
THE MOST DELICIOUS CHEESECAKE I HAVE EVER EATEN!!!!! i have never made a cheesecake before and this came out beyond incredible!!!! i couldn't stop staring at it's beauty (and neither could anyone else in my family)! i would have given this a perfect rating even if it didn't taste delicious just based on how beautiful the raspberry swirls looked but wow was this delicious! better than any restaurant if you ask me. I think it even tastes better over time (after a few days). i used a dark chocolate fudge cookie (keebler) for the crust (paired perfectly with the raspberry. other than that, i followed the instructions exactly. and the raspberry sauce was a little too tart so the trick was to serve with just a tiny bit. my brother doesn't even like dessert and he gobbled his up in half a second. I'm making a second cheesecake tonight! so much fun to make and WOW soo delicious!

Slow Cooker Cilantro Lime Chicken

Reviewed: Feb. 23, 2012
this was soooo easy & so yummy! i doubled up on the lime & cilantro & followed everyones suggestion by going with a top of the line salsa (went with the hot). i also added a can of black beans & chopped onion. you can make this extra healthy by using low sodium taco seasonings & low sodium black beans. the chicken was SO tender and so easy to shred! served it on whole wheat tortillas with lettuce, tomato, leftover rice from the night before, fat free cheese, fat free sour cream, and black olives. having the leftovers as a "taco salad" today for lunch!
