Soft Oatmeal Cookies

These just came out of the oven and they are amazing! I used all whole wheat flour, cut the sugar by 1/3 and added 1/2 c dark chocolate chips. I also didn't chill, just spooned them on the cookie sheet. Thank you!

Whole Grain Breakfast Cookies

Ok, my second go with alterations. I doubled the recipe, used a gluten free flour mixture instead of whole wheat, cut the flax to 1/2 cup and replaced with 1/2 cup of unsweetened coconut. I added a tablespoon of chia seeds. Replaced the canola oil with 1/3 cup avocado oil and 1/3 cup applesauce. Substituted honey for agave, and omitted the brown sugar. Added 1 cup of chocolate chips and 1/2 cup of craisins. The rolling and squishing was too much work so I just dropped them onto parchment paper by the teaspoon. Amazing! I know I changed a lot but they really turned out well and I wanted to share. Not too sweet, not too heavy. Thanks for the great foundation!

Homemade Vanilla Pudding

I love this! I've made it twice, mixed everything in a bowl then microwaved it, stopping to stir a couple of times. First time I made vanilla, the second I added unsweetened cocoa for chocolate - YUM!! Now I have to figure out butterscotch... : )

Curried Carrot Soup

This was amazing with a few changes. I added garlic with the onions, 1/2 tsp of ginger and ALOT of salt. After I pureed, I added some evaporated milk to taste. Excellent, thanks!

Banana Sour Cream Bread

So good! I used Greek yogurt instead of sour cream, cut the sugar down to 2 cups, used 8 bananas (that's what I had) and used 1/4 c. butter + 2/3 c. apple sauce to cut the fat. I also made muffins (it made 30 big ones) instead of loaves. They were fluffy, moist, with just enough sweetness.

Best Buttercream Frosting

Amazing. Just what I was looking for, not too sweet with perfect texture. I followed recipe exactly. I always took the "ball" stage as cooking it until it thickens and begins to stick together and lift away from the pan. To avoid lumps, I whisked the flour into the milk prior to cooking it. I also beat the butter/sugar mixture for quite some time - not until the sugar was completely dissolved but close. If you make this the day before you want to serve it, the sugar should dissolve completely. Just let it stand at room temp for a couple of hours prior to serving to soften it again.

Chicken Breasts with Balsamic Vinegar and Garlic

I love this dish. I've made it four times now, and the last I changed it up a bit by not flouring the chicken prior to frying but adding a little flour to the reduction once the chicken was cooked to thicken it. It was fantastic.

Whole Wheat Ginger Snaps

Excellent, I followed the recipe exactly. Bake time was about 9 minutes, and it made a HUGE amount (I think around 10 dozen) as I rolled the balls about 1 inch in diameter. Thanks!

Pumpkin Chocolate Chip Muffins

Very nice. I cut the sugar down to 1 1/2 cups, used whole wheat flour, 2 cup fresh steamed pumpkin, 4 eggs and added about 1/2 c oat bran and 1/4 c. ground flax. Came out nice and fluffy. Thanks!

Sam's Famous Carrot Cake

Except for omitting the raisins and coconut (just preference), I followed the recipe exactly and got rave reviews. My brother in law actually didn't believe I made it : ) Iced it with 16 oz cream cheese, 1/2 c butter, 3 c icing sugar and 1 tsp vanilla. Fantastic.

Italian Spaghetti Sauce with Meatballs

This was very good, but a little too salty. Next time I'll use unsalted tomatoes or cut the salt in half. I followed the recipe exactly, except I made mini meatballs instead of 12 big ones.

Sweet Potato and Carrot Soup with Cardamom

This soup is fantastic! I used fresh ginger instead of dried, and included a couple of cloves of garlic. I also added some red lentils to the sweet potato and carrots while it was cooking, and blended in some soft tofu to give it some protein at the end. It's a hearty, healthy, feel-good meal and is forever included in my rotation. Thanks!

Brazilian Black Bean Stew

Fantastic recipe. I used Italian sausage, but only half of what the recipe called for. I didn't have a hot pepper so I just used red pepper flakes, and it was lovely. I think next time I'll go the vegetarian route, a little healthier. Excellent flavour.

Blueberry Cheesecake Pie

I think this had potential, but as a virgin cheesecake baker I wish the recipe indicated I should cool the cheesecake layer before adding the blueberries. Everything blended and I wound up with soup. Lesson learned, but I probably won't make this again.

Breakfast Casserole II

This was great. I made it the night before with skim milk, half fat soup, light cheese and discarded half of the egg yolks. I baked it for a little longer (I thought it might be soupy) but it turned out fabulously. It was a hit with the whole family.

Almost No Fat Banana Bread

This bread was lovely. I used brown sugar instead of white and only used about half of what the recipe called for - then I added some chocolate chips to make up for the sweetness. I also mixed in some whole wheat flour for some added fiber - turned out great! Thanks...
