Filet Mignon with Rich Balsamic Glaze

I made this recipe exactly as it is written because that gives you an honest review. The flavor is delicious and I will make this again. I put the balsamic/red wine and brown sugar in a sauce pan and brought it to a gentle boil while my steaks were being browned. I added the sauce to the meat , covered it and simmered it on low for 4 1/2 minutes. I used thick steaks. After removing the steak I turned the heat up a little and reduced the liquid until it was lightly thickened. The flavor was richer than had I not done that. This was restaurant quality flavor. The steak was tender and juicy as well. Thanks for another delicious addition to my recipe box.

Baked Oatmeal I

I was really surprised at how delicious this recipe is. I made it for overnight guests and they went nuts for it. I doubled the recipe and they ate the entire first batch for breakfast. My husband came home late that night and ate almost 1/2 the second batch and he is not a big sweet eater. I made the recipe exactly as written switching only cranraisins for raisins and added a bit of chopped pecan for texture. This is a new family recipe. Thank you!!!

Raisin Sauce

This sauce was so good, I hated to throw it out after the ham was gone. I made it exactly as written and will use this as my default raising sauce from now on. I did wonder how long it would take to thicken. So after realizing that it just wasn't going to get "thick" I took it off the heat and let it cool. It thickened as it cooled. It was perfect!

Holly's Hummus

This was my first hummus and it was a hit! I may have added a little more cilantro and basil because I don't usually measure that when it is fresh,but this was delicious with fresh veggies. I will keep this one handy for company always!! Thank you for sharing!

Simple Garlic Shrimp

I hate it when people write a review on a recipe that they totally altered....but I did just that. I was in a tight bind and needed to come up with dinner fast. I had some precooked shrimp thawed and went for this recipe. I didn't have fresh Italian parsely but I did have cilantro. Otherwise I followed the recipe to a tee.....oh, well I was sipping white wine and decided, what the heck! I poured a "glug" of white wine into the sauce. I served it over white Jasmine rice. This was a 5 Start restaurant kind of good! Thank you for sharing this delicious shrimp dish!! Mmmmmm!

Chicken Enchiladas III

I hate it when people write a review on a recipe that they have altered so much that it is not even the same dish.....but , humbly that it what I am about to do. I didn't have some of the ingredients on hand so I used what I had and used this recipe as a guideline. I used cheddar cheese soup instead of processed cheese for the sauce. I didn't have but 1/5 cup of sour cream and I used non fat milk instead of evaporated. Oh! and I used left over turkey which I chopped into small cubes !! Everything else I did as per the instructions. My husband loved it. I poured a little of the sauce on the bottom of a prepared 9 X 13 pan , filled my fajita styled flour tortillas with the meat sauce and a little cheese sauce. This recipe is generous in portions. I topped the rolled tortillas with the remaining sauce, topped it with grated cheddar cheese and french fried onion rings. It was surprisingly very good!! Quick and easy!!

Turkey Leftovers Dinner Casserole

This was a great recipe for using up the Thanksgiving left overs. I altered it a hair....only a hair. I layered everything and poured a little cream of mushroom soup and gravy between the layers. Bottom to top was turkey, green bean casserole , stuffing and topped with mashed potatoes. I poured the remaining soup over the potatoes then sprinkled french fried onion rings on top. I baked it for about 40 -50 minutes at 350..(.the length of time depends on how much food you have to heat). But it was a hit and everyone loved it even the kids!! Thanks!!

Easy Marinated Pork Tenderloin

I followed this recipe to the letter and it was delicious. I was expecting more of a dijon flavor , but no! It was wonderful. I used a 1.5 lb Homel Pork Roast so following the recipe I discovered that I under cooked it by about 30 minutes. I added little red potatoes to the roasting pan too. Otherwise this is a keeper. My husband and son loved it!!

Steel-Cut Oatmeal

Sooooo goood! I like to keep the calorie count as low as possible so I eliminate cooking with milk but when serving I add a little Sugar Free Hazelnut coffee creamer. I like to alternate with different nuts, walnuts being my favorite, but pecans are also great... and same with fruit. It's delicious with fresh blueberries, peaches, apples and cinnamon or raisins, cranberries etc. It's great for breakfast when family is visiting!

Just made this for our new neighbors who stopped by for a glass of wine. Delicious. I only used 1/4 of a whole Jalepeno. Glad I did. It was just perfect.
