Quinoa and Black Beans
Never had quinoa before and didn't know what to do with it... this was a perfect start. I sauteed the onions and garlic with a red pepper and added about a 1/2c of that to the boiling chicken broth & quinoa along with about 1/3c of soffrito. While that cooked I browned 1lb of ground chic breast seasoned with adobo, garlic powder, cumin, salt & pepper in canola oil. When the quinoa was done I poured the entire contents into the pan with the chicken and the sauteed veggies. I used 1 can of black beans and the leftover corn from our frig (about 1/2c or so). Mixed it all up. Seemed a little dry so I added another 1/2c of soffrito. It was yummy! Thanks for the inspiration :)
