Cheesy Poblano Chicken Enchiladas

Holy cow... First off if you haven't tried this soup, go fix you some for lunch. Best canned soup ever. I'm no "food snob"(there's enough of those in the world, don't you think?) so I have no trouble using good ol' Campbell's. You know the ones... they turn up their aristocratic noses up at canned soup? Ya, those. Look, these enchiladas are to die for. I used flour tortillas, since I always have those. You must try this! Tonight! LOL!

Cajun Chicken Ragu

I do love ChefJohn's recipes. That said I made one change. I didn't have any cooked chicken so I roasted a couple leg quarters seasoned with some homemade creole seasoning. Once it was cool, I stripped the bones and made a quick chicken stock with them and the skin. I think that gave it a more complex flavor. Ya, it took some extra time, but I think it was worth it!

Kool-Aid® Pie

Where has this recipe been all my life? Fabulous! I only had chocolate graham crackers, so I tried raspberry KoolAid with a few fresh berries on top. Off the charts good! I'm going to make a couple to bring to the Labor Day picnic this weekend.

Quick Pickled Jalapeno Rings

These are simply fabulous! When you use up the jalepenos,save the juice and slice up some onions really thin and add to the jar. Also good for cucumbers! We sometimes buy the mini English cukes from Sam's and they go south before we can use them all, so I cut some in chunks or spears. I'm telling you, the used jalepeno juice is liquid gold around here! For those who want the peppers to have less heat, lay the slices out on your board then poke out the seeds and membranes with an apple corer. Easy-Peasy!!

Banana Crumb Muffins

I've made these several times and we love them. I did a little tweaking this time. I did as other reviewers and upped the cinnamon and added vanilla. Used canola oil instead of butter. I added about 3/4 cup of walnuts, too. For me, the recipe made 12 regular muffins and 12 minis. To keep us from porking out on them, I'll offer some to my salon clients. That should help my tip jar!

Creamy Chicken Noodle Soup

As written, quite bland, but since it's so simple, it's still a winner. Next time I made it I added a little poultry seasoning. Also, I sauteed some onion with the celery and instead of carrot, I tossed in a handful of frozen mixed veggies. For the reviewer who said it got too thick when the noodles were cooked in the soup, if you look in the ingredients list, it does say to add COOKED noodles. If you cook the noodles in the soup, it releases its starch into the soup and acts as a thickener.

Very close to our old family recipe. We've always used round steak, pounded very thin. You gotta serve this with grits, though! Actually, it's an old traditional breakfast dish, from plantation days. Thanks for posting this!

Simple Banana Coffee Cake

It's exactly what it says it is. Very good, and very simple. Having said that, I tweaked the heck out of it the second time I made it. After I mixed the batter I added chopped walnuts (1/2 cup or so) and a chopped FIRM banana. Then, after pouring it into the pan I topped it with a standard streusel topping. Lemme tell ya... over the top!

Becca's Chicken-Fried Pork Chops

Wowza... these were really yummylicious! I used bone in chops and pounded (the meat, not the bone!) to tenderize. To the reviewers who found it lacking in the spice dept, I added some Sririca to the egg wash, and also sprinkled them with some of my house seasoning (1 tsp each cayenne & black pepper plus a tbsp salt) before tossing them in the flour. Comfort food, y'all!

Potato Cake

Now, every time we have mashed potatoes, I make a bunch extra so we can have these awesome yummies. Love 'em for breakfast with a couple of over-easy eggs. Great with steaks or pot roast too.

Home Made Mayonnaise

Could I have about 25 stars??? This is the best stuff ever. We had a bad craving for Creamy Italian Dressing I from this site, but no mayo. I whipped this up in less than 3 minutes with a stick blender. I used canola oil and added a pinch or two of paprika. Also white pepper. At first I was kinda disappointed since it seemed thin but we flippin loved the taste. Checked it out this morning and it's perfectly thick. I have died and gone to mayo heaven! Thank you sooo much and thanks also to those who suggested a stick blender.

Pesto Pasta

I think we could have this 8 or 9 days a week! I added some green & red bell peppers with the onion. For those who found this dry, save a half a cup or so of your pasta water before you drain the pasta. Then add it back in a little at a time until it's moist enough. Something about the starchy water does the trick.

Easy Broccoli Salad

Who knew something so simple could be so good? This has such a fresh clean taste. The dressing is a bit more acidic than I like but that's just me. I added about 1/2 tsp honey to balance it out. We'll have this often! I bet this would be great with asparagus, too. Tomorrow night!

Quick and Easy Pizza Crust

Super, super recipe! I use my stand mixer and it works perfectly. I use the dough for focaccia, calzones, breadsticks, cheese rolls, you name it. Actually, I thought I'd reviewed this recipe years ago. Well, better late than never!

Picante Chicken Rice Burritos

We loved this! I made this into smothered burritos; traditional in this area. After rolling the burritos, I brushed them with a little olive oil to crisp them up a bit. Baked without the cheese, then to serve, poured green chili over, topped with shredded jack cheese, sliced black olives, chopped tomatoes and lettuce plus some sour cream. So dang good! Thanks!

I agree - this is the best! We had this tonight for our "Annual Deadliest Catch Season Premier Crab Feast" (really!!) Messy but what the heck, it was Wonderful!
