Chicken Breasts with Balsamic Vinegar and Garlic

I think you REALLY have to love balsamic vinegar to enjoy this. The coating came off the chicken, the garlic was put in too soon (as per directions), and there wasn't enough sauce. My family didn't care for this dish.

Red Velvet Cake

Country Apple Dumplings

You have to try this! We're not big apple fans, but my Mother in Law dropped off a bag of apples at out house. My husband was digging into it right out of the oven! My kids loved it too. We served it with Vanilla ice cream and some chopped, toasted pecans sprinkled on top. Yum, yum!!

Irish Cream Truffle Fudge

Not good at all! I made this for a St. Patty's Day party and it was barely touched. The 8x8 pan is way too small. Also, the "layers" are not necessary. All they did was make it crumble when I tried to dig it out of the pan. The consistency was not fudgy either. Definitely a waste of some good Irish Cream.

Caramel Apple Pork Chops

Frank's Famous Spaghetti Sauce

Wow, this is good! I usually make the hamburger kind of sauce, but the turkey was delicious. My whole family enjoyed this. My husband even said it reminded him of his mother's spaghetti sauce...the ultimate compliment! Thanks Frank!

Sweet and Savory Cheese Ball

This is really good. I served it on Father's day as an apppetizer and I had to print out the recipe for everyone! Instead of making it into a ball form, I used a small bundt pan to shape it. I spooned the strawberry preserves into the hole in the center. Made for a very pretty presentation. Give it a try!

Asparagus Cashew Rice Pilaf

This was sooooo good! I cooked the rice mixture for 15 min. covered. It was just the right consistency. I used chicken stock instead of veg. Just a personal preference. We added some leftover grilled chicken on top. Very light and flavorful.

Chicken Pot Pie IX

This was so quick, easy, and delicious. The only changes I made were I didn't add the celery seed (just a personal preference) the chicken I used was grilled and I added a small can of corn because my kids love corn. This is great comfort food!

Marinade for Chicken

Really easy and super quick! We let the chicken breasts marinate overnight and the flavor was intense. The only reason I don't give it 5 stars is because it was a tad bit on the salty side. Next time we're going to try to add a bit of brown sugar to the mix and see what happens. Warning: if you're cooking this on the grill, it tends to flame up a lot! Makes for quite a show!

Stir-Fry Pork with Ginger

We were a little disappointed in this one given all the great reviews. I followed the directions exactly as written. We ended up adding some stir fry sauce to it to give it more flavor. Won't be making this again.

Anaheim Fish Tacos

This was just OK. We thought the filling was a little too "juicy" for the corn tortillas. They ended up being really soggy and fell apart before we could eat them. Maybe flour tortillas would work better with this recipe. It did make the house smell great!

This was just OK for me. I thought the flavor combinations sounded "interesting." There's too many flavors competing. Don't like the addition of the fajita seasoning. Maybe it would be better without.

Mexican Chicken Corn Chowder

I had high hopes for this one and it was just OK. I did as others suggested and used the Ro-tel mexican tomatoes for extra flavor and shredded the chicken. I also made my own creamed corn with some leftover roasted corn on the cob. The end result wasn't all that flavorful and very greasy. I ended up adding some chopped jalapeno peppers and crushed red pepper to kick it up. Won't make this again.

Slow Cooker Chicken Parisienne

No one in my family cared for this. It had the consistency of wall paper paste and tasted about the same. We're pretty picky eaters though and it was my first attempt to cook something in a slow cooker. I added baby portabello mushrooms and fresh chopped garlic to give it a little extra something. Still lacked in the flavor department. It did make the house smell good.
