Zippy Shepherd's Pie
This isn't typically what I think of when I think of Shepherd's Pie...it's better!!!! I'm in Italy where cheddar cheese is non-existent, so I just added a bit of parm to the potatoes and on the top before putting it under the broiler. I did double the amount of potatoes to make it more of a 1:1 ratio with the meat and veggies. The only other change I made was I used fresh carrots and added a small can of corn when I added the peas. Very good.

Norwegian Hazelnut Cake
This cake is "so friggin' good" (to quote my husband). By far the best way I have found to use up the huge bagful of hazelnuts that my mother-in-law dropped off a few weeks ago. Although shelling the nuts takes a bit, the cake itself is quick and easy to throw together. I had wanted to make the glaze as well, but realized too late that I didn't have any cream, so instead I added a half cup of mini chocolate chips to the batter and left the finished cake plain. I did not have high expectations when I took it out of the oven because it looked really hard on the top, but after it cooled and we tasted it, it is sooooooooooo good. I cooked mine a half hour and having left it a little tiny bit underdone made it almost have a "brownie-like" consistency. Very good...one of the best cakes I've had.

Easiest Peanut Butter Fudge
mmmmmm....so good! i made this with the 'Homemade Yummy Fudge' to give out for the holidays and it came out great! I got a bit paranoid after reading the reviews about needing to really time the cooking time exactly, but I did it for 2 1/2 min after the first bubbles came up and it firmed up wonderfully. I did 2 C brown sugar, 3 C confectioners sugar, and 1 C pb as other viewers suggested. yummmmmmmmmm!
