This is very difficult to make. The serving for four does not make enough for four, maybe three. You have to pour enough to make it a little thick in the pan so you can turn it without it breaking. I would suggest using a very small frying pan. The low rating is predominately due to the degree of difficulty in cooking this. Flavor was ok

This is really good, but only if you actually use about 3 or 4 tablespoons of butter. 1 1/2 tbl does not do the job.

French Dip Sandwiches

Loved it! Mother -in- law asked for the recipe too. I did this at night and let it sit on low through the next day for my arrival home from work. I used flank steak instead. It broke apart and was delicious with a lot of sauce. Ate it with spiral noodles. Drained the sauce reserving just a little for the meat to sit in overnight in a zip lock and gave to my husband for a sandwich at work the next day. He loved it.

Wilted Spinach Salad

I am not a big salad eater. I hate lettuce, but have found that I like romaine and spinach, so I tried this recipe. It was very good. I added croutons too. I used it for a dinner party, and unfortunately, the other guests didn't like it.

Saucy Chicken Cordon Bleu

The sauce is delicious. It added to the richness and had great flavor, especially with the wine added. The chicken itself was pretty good and I used italian bread crumbs instead of corn flakes. I also used 1/2 chicken cream of soup and 1/2 chicken cream with herbs. Very Good!

Asparagus Parmesan

I made this for my mother in law who loves asparagus. She thought it was great. I used canned spears instead of fresh ones. (I think fresh spears would have turned out better) The spears were a little too limp for my taste when using canned. Otherwise, not bad.

Flank Steak with Garlic Wine Sauce

My husband thought this was too tart...but that is probably b/c I used cooking sherry instead of red wine(I didn't have any). I liked it, and expect it to be better with red wine I'm sure. I will probably try this again, but the right way.

Cinnamon Chicken

This was not that good. The spices were overwhelming. My family and I ended up scraping off the spices. So when making this, definately cut back. I did however serve this with sweet potatoes. (lightly mixed with butter, brown sugar and salt. Eating the Chicken with the sweet potatoes did bring out the cinnamon flavor. I will not make this again.

Blackened Tuna

This was really good. I served over a bed of rice with red and yellow peppers and onions. It was quick and easy to make. One bit of useful advice...I used Emeril's Bayou Blast and it really tastes great! I also cooked it on the grill..

Chicken Piccata II

This recipe was a hit with my husband. The leftovers for the next day were even good. I made bow tie pasta with a white cream sauce and green beans to compliment this dish.
