Easy Salsa Meatloaf

Awesome. I added picante because i did not have any salsa. I will no longer be using the meatloaf seasoning packs. I did add 1/2 cup of onion and green bell pepper.

Carrot Souffle with Brown Sugar

This was the first time i ever made a souffle and i am proud of myself. I made it for Thanksgiving dinner and it was good. Some of my family just do not want to try new things they kept making excuses not to try. But i am persistent and at least got them to try a table spoon and they found out it was not as bad as they thought. Thanks.

"Pantry Raid" Chicken Enchilada Casserole

This was awesome. And I also did my pantry raid. I had no tomato sauce, so i pureed crushed tomatoes i did not have black beans, so i used refried beans 1/2 cup fat free sour cream. I forgot to put the cheese on top of meat mixture and had to place on top of corn meal mix. Still very good.

Happy Roast Chicken

It was okay i added an extra lemon and 1 onion cut in half. I should have added more dijon to the skin. The best roast chicken i made was Ina the Barefoot Contessa recipe.

Apple Butter Marinade for Chicken

This was very good and different, but 20 min. did not cook my chicken. I cooked mine at least an hour I had 6 drumsticks instead of 4 and the sauce was more than enough. I will make again.

Broccoli Coleslaw

The dressing was very light and refreshing. I added cucumber to dish it was really good with the ramen noodles and sunflower seeds gave it some extra crunch. I will make this again.

Tomato Pie I

This is the second time I made this. I took the recommendation of one of the rate and let my sliced tomato lay on paper towel to get rid of some of the juice I also peeled my tomatoes. The paper towel tip worked. I will be using in the future. These are always good and you can use any herb.

Jimmy's Mexican Pizza

This was very good and filling. I did make a couple of changes instead of beed i used ground deer on top of the deer i placed some black olives. When it came out of the oven i put my salsa on top of meat and olives. Then completed per recipe.

Colcannon Bake

OMG! This was sooooo good. I added some turmeric to cabbage, leeks, and onion. I used red potatoes. I left some lumps in the potatoes and that gave a little more texure my cabbage was prepared with a little crunch also.

Herb-Crusted Chuck Roast

This was awesome. I added a couple more herbs for more flavor. I prepared mine in a cast iron dutch oven and it worked as well as a shallow roaster.

Slow-Cooker Pepper Steak

This was extremly delicious. I prepared mine in a cast iron dutch oven. Fried my beef then added a can of mexican tomato sauce, an onion with bouillon everything except veggies,. It only took about an hour and i added my veggies(i also added celery, a red bell pepper and carrots) in the last 15 min. or so i wanted them to have a little crunch.
