Black Bean and Rice Enchiladas

These are awesome! Followed the tips. To prevent sticking, I still sprayed non-stick spray and then I did put enchilada sauce in the bottom of the dish. I had some cooked shrimp leftover from another meal so I chopped them and added to the rice mixture at the end. Topped them all with enchilada sauce instead of salsa. Skipped the cilantro as we are not huge fans. These are on the permanent dinner rotation.

Black Bean Chili

Just perfect!!! Only changes I made were to add a couple more cans of black beans and used one whole small (14 oz.) can of chicken broth. I just simmered it down for a couple hours or however long until it got to the consistency I like. I didn’t bother pureeing any of it.

Baked Ziti I

I've been making this for years and always a big hit. I substitute hot Italian sausage for the ground beef. I up the provolone to 8oz. because I just order ½ # at the counter. I go with either regular sour cream or reduced fat. Doesn’t effect is one bit going reduced fat. I’ve never tried fat free but probably wouldn’t be an issue. I just eyeball the shredded mozzarella.

Spinach and Sun-Dried Tomato Pasta

Good simple, quick dish. I add chicken when I have it. Not sure why you would cook chicken and pasta together and give the recipe a bad review........ Reviewed: Jul. 29, 2009 Pasta didn't cook all the way without the chicken being overdone. I suggest cooking the pasta separately and then adding it in with the spinach. There wasn't much flavor to this dish.

Pat's Baked Beans

Excellent beans. Some changes I made. I rinse and drain all beans (except baked beans). Subbed black beans for the garbanzos. Added to taste a little minced chipotle in adobo for a little kick. Also, pre-cut the bacon into ½ inch pieces. Cook bacon in a cast iron pot until done and add the onions (and don’t drain any drippings) and cook until almost tender. Add the garlic about one minute before the onion is done. Stir in all beans EXCEPT the baked beans. Stir about one minute or so. Add the rest of the ingredients. Mix well. Bake in the cast iron pot in a 350-degree oven until desired thickness.

Ham Bone Soup

Maybe I used too much onion, maybe I didn't cook it long enough. I won't probably won't try it again. (Although I used a honey-baked ham...which might have something to do with it...)

Boilermaker Tailgate Chili

Excellent chili. I used one chili pepper to start, no hot sauce or spicy beans. Also used 1 can beer. I adjusted the heat after a couple hours of simmering. Also went with 1/2 ground beef and 1/2 hot sausage.

Vegan Black Bean Soup

EXCELLENT! My wife loves black bean soup and I made this and it is the best she's had anywhere. I did go with 1 TBS chili powder and 1/2 TBS cumin and a pinch of cayenne. I'd increase the cayenne next time for a bit more heat. I used canned vegetable stock which is just fine. I wound up adding approximately 2-3 cans (4-6 cups). Just add to your desired consistency. Don’t even try to puree the tomato/bean mix in your blender---go with your processor. I rinsed all the black beans but dumped the corn in undrained. This soup is highly recommended and a meal in itself!

Andie's Stuffed Mushrooms

Very good! I went with 1/2-1/2 beef/hot Italian sausage combination. I overstuffed jumbo mushrooms and put a little water as suggested in the pan. Check the water level to be sure not too much water is released and rise up to the stuffing. The mushrooms were completely cooked through as well. They were devoured at Christmas dinner.
