Pumpkin Chocolate Chip Muffins

I always feel the need to tinker with a recipe so here goes: Increased pumpkin to 1 cup. Reduced the sugar to 1/2 cup, added 1/4 cup of buttermilk in place of water and then spices as follows:2 tsp. cinnamon, 1/2 tsp. ginger, 1/4 tsp cloves, eliminated allspice. Added 1/2 cup walnuts and 1/4 cup golden raisins.Didn't use the choc. chips as my husband wasn't home and he could'nt make me. He would put them in everything, a confirmed chocoholic:)Used paper muffin tin liners and preheated oven to 350 degrees and cooked the muffins for 18-20 minutes til my bakery poker came out clean. All the rest of the ingredients I used as in the recipe.House smelled spicey good.

Sausage & White Bean Soup

I started with Gianelli Sweet sausage patties which I broke up as they cooked, drained the fat off and set aside. Course cut sweet onion and celery along with red bell pepper were sauteed in olive oil and were cooked seperately. I added the sausage and veg to a 32 ounce box of Swanson chicken broth and 2 cans of drained and rinsed cannellini beans and 1 can of chick peas. I made a roux and stirred that into my base along with 1/4 cup of light cream just because it was a snowy ,miserable November day in upstate New York and we needed comfort food. Oh, and to finish 4 small sliced garden tomatoes, tons of garlic and fresh cracked pepper.OMG it did the trick and I will make it again.

Little Mickey's Favorite Cheesecake

Left out the cinnamon and the chocolate chips.Did use 1/4 batch of Ghiradelli Dark Chocolate Brownie mix as the crust( Hands down the BEST)and baked it for 15 minutes. Poured the cheesecake mix and baked it for 50 min.@350.Did crack a little, will try the pan with water under the cheesecake next time. Water bath sounds too tricky. Let it cool as suggested in a cracked oven and then refrigerated. Served at a Halloween party and everyone said it was spooktacular and the concensus was it was rich enough without ganache and p.b. cups.This was my first attempt at homemade cheesecake and I was really pleased with the results.

I would give it 5 more stars if I could. Definitely want to spoon the flour in and use large room temp eggs.For the 2nd batch I did decrease baking powder to 1/2 tsp. and increase the baking soda to 1 1/2 tsp. also just a pinch of salt as the butter was salted. Beautiful looking cookie too! Oh, almost forgot, used an ice cream scoop and it was super fast. Just scoop and press them down to 1/4 in rounds. Oven temp and bake time were perfect.
