Garbanzo Bean Soup

Homemade Spaghetti-O's. Yech! So not special. I added a few tablespoons of minced dried onions at the beginning, and had to keep adding water to try and have enough water for the pasta, which still stuck to the bottom of the pan. I couldn't add enough Salt and Pepper, and I added quite a bit of garlic powder. Oh, and I served with Parmesan and Mozzarella sprinkled on top. I only tried this recipe because it was the only thing that used Acini Di Pepe that wasn't sweet, or just didn't look appetizing, and I'm afraid this only looked good to me because I LOVE garbanzo's, which did nothing to redeem this. Oh and because I had a #10 can of tomatoes. The rest will go towards a nice homemade chili. This only gets 3 stars because it happened to be a home run with all of my kids. Who'd have guessed? Next time however, I'll save myself 30 minutes and just dump a can of beans into O's, and open a can of something yummy for me.

Wheat Crackers

Good, I made it as written, baking just a little more, and they were still just moist, not really like crackers. I need to make a few more batches to tweak them down to how I like them.

Caramel Apple Cupcakes

Amazing! I shredded the apples, this pulled out some juice, which I threw into the batter, and they were tasty and moist. Made home made caramel instead of melting candies, and it was a hit.

Big Soft Ginger Cookies

This has become a regular dessert at the Barefoot house, Papa loves ginger cookies, and this is the best one I've found yet. I've already made it about 6 times in the last 6 months.

Amish White Bread

AMAZING! I learned to bake bread using this recipe, and even though I've tried many other recipes, I always come back to this one. Whether for a slightly heavy free form loaf to pull apart for fondu, shape into roles, make into monkey bread or cinnamon rolls, or for the loaf pan, when cut after completely cooled this is our sandwich bread. I usually switch out half of the flour with whole wheat, and my kids love it, and they usually frown at store bought wheat bread.

Best Ever Banana Bread

So yummy! I love that we can switch out the banana for a can of pumpkin, or a cup and a half of zucchini, and you totally change up the bread without too much work. Love it!

Ranch Bean Dip

Yummy! This would be best served in a fondu or small crock pot to keep it warm and runny. BTW, like many other reviews, I also halved the ranch, much more and the other flavors would have been lost, half was still really strong. I also happened to use mozzarella, because that's what I had handy at the moment, and it was nice.

Homemade Black Bean Veggie Burgers

This was great! I used a little less hot sauce and chilli powder, and it was still amazing. This is one of those things whre the natural flavors are what you taste at first, but then the heat builds and kicks you when you're almost done eating. Will make it with Thai Chilli sauce next time. Oh I had to make my own bread crumbs this time, easy and quick process.

Eggplant Rounds

I used olive oil, instead of veggie oil. I added flour and not just cornmeal and seasoning salt instead of chilli powder and oregano. It was a hit. I also caramelized an onion and served them with that on top as a side to spaghetti and marinara. So tasty. Hubby and I couldn't get enough, but the kids were too nervous about the egg part of eggplant.

Cheddar Cheese Straws

You're gonna have to get your hands in there, so just be ready for that. Don't bother putting the dough on the counter, just roll between your hands. This filled a half sheet, for anyone wondering about the output. It's not 48 servings, it was about perfect for my family of 5, two small appetites and 3 big ones... I made them a little fat because I couldn't picture "slightly thicker than pencil." I should have gotten over myself. I had to bake for 8 minutes and then broil to brown them up cause the rest of dinner was getting cold. Next time I won't add so much cayenne (I kinda' did a heaping 1/4 tsp), and add some garlic powder to round out the flavors. They were a giant hit, the kids couldn't get enough, and it's added to the short list of food ideas.

Homemade Mac and Cheese

I offered to my little boy that I'd make him ANY treat he wanted if he hurried through his chores Saturday morning, I was expecting cookies, cupcakes or bars, but he asked for "real mac n cheese, not from a box!" "Umm, OK." So I popped onto my handy allrecipes app, and once again you pulled through for me! I was really worried because every time I'd ever had homemade mac it was at a buffet with way over cooked noodles, or when a family member made it, it was just dried up noodles with melted and dried cheese, with milk literally poured over the top of it. Needless to say I was pretty nervous. I didn't have Parmesan, or cheddar, just some Colby and Jack, and I didn't have bread or bread crumbs, but I went ahead with the modified recipe, buddy was charging through his chores! I doubled the recipe and baked it in a glass 9x13 casserole. I made sure to cook the noodles al dente, when I popped it into the oven my son finished his chores and pouted looking at the empty pot, he'd though he'd missed out, but he was thrilled to see it baking away in the oven. We had a big sit down lunch, all 5 of us, and everyone filled their bellies while ohhing and awwing about the yummy pasta. There was plenty left for dinner, so I mixed it with the left over California mix steamed veggies, and there was dinner! Success! Thanks Allrecipes!

Stuffed Green Peppers I

I wish I could give this 5 stars, but it just wasn't a hit. I did add diced peices from the tops I cut off into the stuffing. It was good, but we ended up scooping out the filling and just eating that and the soup.

Fresh Pea Soup

Instead of shallots I used an onion, instead of just water I added a 14 oz. can of chicken stock, with 1/3 cup water, and I didn't have any cream, so I added about 2 tablespoons of cream cheese. I may have over blended it a bit. It had a bit of a dryness to it. Not too thick, but the dry side of peas. I added about 1/4 tsp or garlic powder, and bit of sea salt and this helped it along immensely. Next time I'll add more veggies, probably some potato and add some fresh garlic to the shallots, to give it more body, and probably no water, just broth and cream.
