Lentil Soup
Delish! I ended up making it and eating it the next evening so perhaps the sitting made it that much better. This second day I had to add ~4 cups of additional water. I followed the recommendations and used 64 oz of veggie stock, 28 oz of crushed tomatoes, 4 carrots and a container (4 cups) of spinach and 4 tablespoons of balsamic. I also added a tablespoon of tomato paste and 2 tablespoons of butter since I had to add the additional water this second day (needed some depth). End result - fantastic! It's a keeper...thanks for the recipe!

To Die For Blueberry Muffins
My husband says "delicious! you finally broke the code! Its taken years!". And it's true, I've tried many blueberry muffin recipes and I've finally found a keeper! Decadent. Better than a cafe. I followed the recipe to a tee, added about a teaspoon of vanilla - made 4 large muffins ( filled almost to top of lg muffin pan) and had a little leftover crumble. I did spray whole pan for ease of removal and baked about 25 minutes. Perfect and can't wait to make again!

Stir-Fried Vegetables with Chicken or Pork
like many other stir-fries I've tried, comes out tasteless. I did not add the salt, for fear of too much sodium after using regular soy sauce (not mushroom), but I don't think the pinch would've helped. I did add ginger (thankfully) and this was the only flavor that really came through.
