Zeke's Tortilla Soup

This soup was delicious. I read through the other reviews and added in additional ingredients and removed the tortilla strips altogether (it doesn't need them). I made the recipe for 6 servings instead of 12 and it still made about 8-10 cups worth! I added in 1 can of black beans (drained and rinsed), 1c. frozen corn, lime juice from 1 lime, and 2tbs. cilantro. I reduced the broth/water to 4c. and added in 2, 10oz. cans of Rotel tomatoes/chiles. I served it with the avocado and also a dollop of sour cream. Really yummy & easy!

Cavatelli and Broccoli

Delicious! I stuck to the recipe exactly and even though I thought it would be bland, it was very, very good. I would add more broccoli next time, though. It was heavy on the pasta.

Chinese Cabbage Salad I

So so good!! I didn't have enough cashews, so I mixed in peanuts as well. I will definitely be making this again! Try it, you won't be disappointed!

Baked Ziti I

This was delicious! I made 2 separate dishes, one with 1 lb. beef and the other with shredded zucchini (I'm vegetarian). I just split the noodles and added 1 jar of sauce to each different mixture. I also mixed the noodles in with the sauce mixture before adding to the baking dish. And I used ricotta instead of sour cream. Delicious and super easy! I will definitely be making this again! :)

Black-Eyed Pea Gumbo

This was delicious! I added sausage to my husbands bowl and he just raved about how great this was! Will definitely make again. Also, I added about 1 tsp. of Creole seasoning to spice it up. But I think it would have been good without as well. Great flavor!

Baked Honey Mustard Chicken

I don't eat meat, but I made this for my husband and he raved about it. He loves anything with honey mustard in the title and this was a big hit. Did have to cook it longer than the recipe calls for though, it as still a little pink after 45 minutes. Stayed very moist and it was SO easy to fix! Will make again for sure!
