Cheddar Broccoli Chicken and Mashed Potatoes

I had to do my a bit different since I didn't have any broccoli cheese soup, or any other cream soup that I could use. I first peeled and cut the potatoes and put them on to cook. Then I made my own THIN cream/white sauce to which I added a chicken boullion cube, fresh ground pepper, curry powder and about 1/3 cup shredded cheddar cheese. It was almost as easy as opening a can of soup. I cubed my leftover chicken breasts. I also cut the broccoli up into flowerettes, put them in a microwave safe dish and nuked them in the microwave for 2 minutes until crisp tender. I then added this and the cubed chicken to the sauce and heated it through. I spooned this over the mashed potatoes. Total cook time, 20-25 min. It turned out AWESOME!!!

Curry Cheddar Scrambled Eggs

I've been making my scrambled eggs this way for years and YEARS!!! I love then this way. And I put curry powder as my "secret ingredient" in egg salad sandwiches as well.

Crisp Pickled Green Beans

Took the advice of some other's posts and used a bit less salt (too salty last time I made them), about a scant 1/8 tsp of cayenne pepper, since I had no red pepper flakes and we don't like it too spicey. Last year's batch was too spicey! I also added in a clove of garlic for each pint, not one for the whole brine batch. I got 5 heaping pints and had to make a bit more brine using, this using 2-1/2 lbs of green beans from our garden. Can't wait to try them! Every other recipe like this I've seen says it makes 4 full pints, not 6 half pints.

Caron's Kickin' Quinoa Salad

OMG, this was so good. Didn't have Wasabi powder, no celery and can't eat onions, but I sauted julienned zucchini and chopped carrot, adding in onion powder and the other ingredients. Served it hot, not cold. Wow! Was soooo good and filling.

Blueberry Zucchini Bread

Have to say with the ratings here, I ended up being disappointed with how the taste came out. I used fresh picked blueberries and our own zucchini, took the advice of others and did half applesauce, half oil and a few others. Taste is okay but a bit too bland for me. Comparing this to my own regular zucchini bread recipe - which gets rave reviews from family and friends - this did not measure up. It's okay but not great.

Fried Corn with Smoked Sausage

Making this recipe now. But substituting olive oil for butter and no MSG to make it healthier. I use turkey smoked sausage as well. Making with corn cut off the cob would be even better. Will do this in the summer when fresh corn comes in!

Chicken Divan

Not seeing my first review of this dish so re-doing it. Sorry if it duplicates. I didn't have water chestnuts on hand but would have used them if I had any. Didn't have the soup either, so I made 1 cup of white sauce adding chicken soup base, salt, pepper, curry powder and cheese to it. Then I added the rest of the ingredients for the sauce. I added a bit more chicken to it then the recipe shows. I also added the cheese on top, besides what I put in the sauce. YUM!

Brigid's Blackberry Pie

OMG, I nearly fainted when I heard from my husband of 43 years, for the first time, "that was the best pie I've ever had in my life!" He rarely compliments but never this effusively. And I have to concur...likely the best I've ever made. I did use 1-1/4 cups sugar, the 1/2 cup flour plus 2 Tbsp. cornstarch - since so many said it was runny. And it turned out perfect! Not a bit runny. I added 1/4 tsp. nutmeg and 1 tsp. cinnamon as well. Will be making this winner again!!

Cabbage and Smoked Sausage Pasta

This is a good tasting recipe except for the fact that it has too much oil and butter that is unnecessary as most other's said. Way out of proportion to what would be needed. That's the only reason I gave this 4 stars instead of 5. I halved the recipe and used only about 3 tblps of olive oil, no butter or margarine, used a whole large clove of garlic for the half recipe and added sliced fresh carrots. It was awesome! I also added shredded cheddar instead as my husband does not like parmesan.

Slow Cooker Maple Country Style Ribs

This was awesome!!! I'm not a big pork eater but this sounded so good and I knew my hubby would love it. It was incredible!! Had it for 2 day's dinner. I happened to have real maple syrup on hand and I used boneless country ribs. Sauce was not too thin, and I took the advice of some others here, adding more liquid and spice. Will definitely be making again! To die for.

Curried Quinoa

Really good! I used only 1/2 Tbsp chili powder (regular was all I had) and 1 tsp of curry powder and it was perfect for us! I used vegetable broth instead of chicken broth, as well. Adding some veggies and leftover chicken sometimes, to make a meal. Very yummy.

Like some others, I adjusted the recipe to what I had and prefer. Had leftover corn-on-the cob and cut that to use, not canned. Used our own home canned tomatoes so no green chillies. Added some salsa and chili powder to it. Used far less egg noodles. Want more meat then noodles/carbs. Used real cheese, shredded 2% fat instead of fake cheese. Taste great and worked well! Will likely make again

Deluxe Corned Beef Hash

Great recipe. The thyme adds a great kick of flavor. I added sweet red pepper to it along with the carrots for nuition as well as flavor and color. Did not have onion so I used onion powder. Will be making again.

Garden Fresh Tomato Soup

I made this recipe exactly as it states, with only one slice of onion, and I substituted vegetable broth for the chicken broth. It is THE best tomato soup, my husband and I have ever had!! No way does it make 6 servings, however, unless they are only 1 cup servings. More like 3 or 4 at most. I added nothing else and it was EXCELLENT!

Skillet Zucchini

Enjoyed this very much! I added leftover corn-on-the-cob that was already cooked. I cut it off and added to this. Then I used Hormel Real bacon bits...less than recipe, 2% fat cheddar cheese....also less then recipe, olive oil in place of butter, less bread crumbs, garden herbs: oregano, basil, and added some garlic powder. Forgot to add the parmeson but was super-great anyway. This dish really perfect to add the fresh corn to.

Bacon Water Chestnut Rolls

We made this at Meadowbrook Hall in Rochester, MI for various functions and dinners years ago when I worked there in the kitchen. I had a hard time NOT eating them myself! Great to see this recipe again.

Mexican Fiesta Pasta Salad

Great recipe. I took some other suggestions and added some tomato and shredded cheese. I left out the onion b/c I can't eat it, sour cream and black olives b/c I didn't have either and hubby doesn't like them. I wanted to make this a main dish so I added some ground soy burger crumbles and more black beans. I added more garlic powder and put in onion powder in lieu of onions. It was delish!
