Leftover Ham -n- Potato Casserole

This was awesome. Very cheesy, especially when made with sharp cheddar. As other suggested, I added some chopped celery, red pepper and carrots, plus some frozen peas to make it a full meal. Next time I will add more potato, though. Agree with another reviewer's wife with that. LOL Made this with the leftover ham from Christmas that I had frozen.

Cauliflower Soup with Cheese

Tried this based on the one review and they were right! Awesome soup. Thickened without cream or flour, very tasty!! Did not add quite as much cheese as called for but still great. Used 2% milk. Used my immersion blender and just mixed it all up; did not save the separate pieces of cauliflower to add after. Oh, and I used vegetable broth in place of the water. MUCH tastier!

Slow Cooker Chicken Taco Soup

I helped my daughter make this at her house back in March. It is AWESOME! We did use Bill Echols taco seasoning and it does make it wonderful! I highly recommend it. This is a winner.

Zucchini Herb Casserole

Made this with red quinoa instead of rice for more protein. Did not add onions as we cannot eat them, though we love them. I took other's suggestion on the amount of herbs and doubled them, adding more garlic as well. Since I had some fresh asparagus leftover, I added that along with red pepper to the zucchini as other also stated. Mixed in Parmesan cheese with the cheddar cheese. Did not have fresh tomatoes on hand so I used our home canned ones from last summer and it worked very well. VERY yummy. Had as a meatless meal and was very satisfying. My hubby is a meat and potatoes kind of guy but really enjoyed this a lot!

Sweet and Sour Beef and Cabbage

Anyone who says this is bland and boring is so very wrong and nuts! Or the did not make it correctly. I was a bit skeptical but I was wrong. This was soooooooooo good!! Only things I did different was to use a pint of our canned tomatoes instead of tomato sauce. Our canned tomatoes are cooked down to almost a puree. And I used sweet red pepper instead of green. I sliced the cabbage in strips, too. This is a definite 5 star winner for us.

Chicken Divan

Not seeing my first review of this dish so re-doing it. Sorry if it duplicates. I didn't have water chestnuts on hand but would have used them if I had any. Didn't have the soup either, so I made 1 cup of white sauce adding chicken soup base, salt, pepper, curry powder and cheese to it. Then I added the rest of the ingredients for the sauce. I added a bit more chicken to it then the recipe shows. I also added the cheese on top, besides what I put in the sauce. YUM!

Deluxe Corned Beef Hash

Great recipe. The thyme adds a great kick of flavor. I added sweet red pepper to it along with the carrots for nuition as well as flavor and color. Did not have onion so I used onion powder. Will be making again.

Berry Crumb Bars

These sound very yummy but I would not call them "economical" due to the cost of fresh raspberries! However, I love that they are so versatile and others have said various fruits can be used as well. We do grow our own blackberries so I think I'll try this with those. Thanks for the tip ladies!

Cottage Dill Bread

The other commenter is right...1-1/2 Tbsp of yeast is waaay too much. Maybe 2 tsp. or 1 Tbsp. I also adjust it using a non-bread machine recipe I've made for decades, adding 1 egg, less water (1/2 cup), 1-1/2 Tbsp. sugar. It comes out wonderful! If you use the 1-1/2 Tbps yeast, just make the dough, when done, put into 2 bread pans to bake.

Slow Cooker Maple Country Style Ribs

This was awesome!!! I'm not a big pork eater but this sounded so good and I knew my hubby would love it. It was incredible!! Had it for 2 day's dinner. I happened to have real maple syrup on hand and I used boneless country ribs. Sauce was not too thin, and I took the advice of some others here, adding more liquid and spice. Will definitely be making again! To die for.

Blueberry Zucchini Bread

Have to say with the ratings here, I ended up being disappointed with how the taste came out. I used fresh picked blueberries and our own zucchini, took the advice of others and did half applesauce, half oil and a few others. Taste is okay but a bit too bland for me. Comparing this to my own regular zucchini bread recipe - which gets rave reviews from family and friends - this did not measure up. It's okay but not great.

Crisp Pickled Green Beans

Took the advice of some other's posts and used a bit less salt (too salty last time I made them), about a scant 1/8 tsp of cayenne pepper, since I had no red pepper flakes and we don't like it too spicey. Last year's batch was too spicey! I also added in a clove of garlic for each pint, not one for the whole brine batch. I got 5 heaping pints and had to make a bit more brine using, this using 2-1/2 lbs of green beans from our garden. Can't wait to try them! Every other recipe like this I've seen says it makes 4 full pints, not 6 half pints.

Fried Corn with Smoked Sausage

Making this recipe now. But substituting olive oil for butter and no MSG to make it healthier. I use turkey smoked sausage as well. Making with corn cut off the cob would be even better. Will do this in the summer when fresh corn comes in!

Mexican Fiesta Pasta Salad

Great recipe. I took some other suggestions and added some tomato and shredded cheese. I left out the onion b/c I can't eat it, sour cream and black olives b/c I didn't have either and hubby doesn't like them. I wanted to make this a main dish so I added some ground soy burger crumbles and more black beans. I added more garlic powder and put in onion powder in lieu of onions. It was delish!

Beefy Cheesy Pasta

Took some advice from others that made this recipe sound so much better. Basically changed it quite a bit but....I used 1 lb of ground beef, taco seasoning mix, eliminated the soy sauce, added chopped fresh green and red pepper, onion powder (can't eat onions), garlic powder, light sour cream and shredded low fat chedder cheese.

Curried Quinoa

Really good! I used only 1/2 Tbsp chili powder (regular was all I had) and 1 tsp of curry powder and it was perfect for us! I used vegetable broth instead of chicken broth, as well. Adding some veggies and leftover chicken sometimes, to make a meal. Very yummy.

Hearty Tuna Casserole

Sugar Coated Pecans

Excellent! However, as other's have said, it DEFINITELY needs more cinnamon in it! I did add a bit more but it was still not enough. Would need closer to 1 tsp anyway. I also did add a bit of vanilla.
