Fried Corn with Smoked Sausage

Making this recipe now. But substituting olive oil for butter and no MSG to make it healthier. I use turkey smoked sausage as well. Making with corn cut off the cob would be even better. Will do this in the summer when fresh corn comes in!

Banana Crumb Muffins

Mexican Fiesta Pasta Salad

Great recipe. I took some other suggestions and added some tomato and shredded cheese. I left out the onion b/c I can't eat it, sour cream and black olives b/c I didn't have either and hubby doesn't like them. I wanted to make this a main dish so I added some ground soy burger crumbles and more black beans. I added more garlic powder and put in onion powder in lieu of onions. It was delish!

Beefy Cheesy Pasta

Took some advice from others that made this recipe sound so much better. Basically changed it quite a bit but....I used 1 lb of ground beef, taco seasoning mix, eliminated the soy sauce, added chopped fresh green and red pepper, onion powder (can't eat onions), garlic powder, light sour cream and shredded low fat chedder cheese.

Really good! I used only 1/2 Tbsp chili powder (regular was all I had) and 1 tsp of curry powder and it was perfect!! Very yummy.

Hearty Tuna Casserole

Had to laugh when I came across this because I've been making it for 15 years or more. It was first given to me by a boyfriend of my daughter. I love it and make it frequently, exactly as the recipe states! We love it!

Sugar Coated Pecans

Excellent! However, as other's have said, it DEFINITELY needs more cinnamon in it! I did add a bit more but it was still not enough. Would need closer to 1 tsp anyway. I also did add a bit of vanilla.

Tomato Cabbage Stir-fry

Good, easy recipe...especially to use garden harvest. Found it a bit too bland for my taste, though. Next time I will add more dill or use garlic and other stuff instead.

Zucchini Brownies

Fantastic brownies!!! Like another person mentioned, don't be decieved by the dry textue of the mix before you add the zucchini. It moistens it up perfectly! They are soooooooooo good!! This is a keeper for sure!

Garden Fresh Tomato Soup

This was THE best tomato soup I've ever had, including those at up-scale, gourmet restaurants. My husband feels the same way. I made it with all the ingredients stated except I used vegetable broth instead of chickn. I used our garden fresh tomatoes and added a bit of fresh basil from my garden. The other person was right...the 2 cloves are a MUST for this! It makes the soup. Do NOT leave it out. Awesome recipe!

Sweet Zucchini Relish

Wonderful recipe that uses a lot of zucchini. On the advice of others, I used less sugar and am glad I did. I used 1/2 cup less sugar but wish I'd used 1 cup less. Is still a bit too sweet but is very, very good! Will be making this for years to come! I did the water bath for only 10-15 min. instead of the 30, which I feel is way too long based on many other similar recipes.

Caron's Kickin' Quinoa Salad

OMG, this was so good. Didn't have Wasabi powder, no celery and can't eat onions, but I sauted julienned zucchini and chopped carrot, adding in onion powder and the other ingredients. Served it hot, not cold. Wow! Was soooo good and filling.

Cheesy Tuna Mornay

Good recipe. I halved it for my husband and I. Used more pasta as well. Can't fathom the amt in the recipe, how that would be enough! Used a bit less bread crumbs and added a dash or two of curry powder. This is similar to another recipe I make.

Skillet Zucchini

Enjoyed this very much! I added leftover corn-on-the-cob that was already cooked. I cut it off and added to this. Then I used Hormel Real bacon bits...less than recipe, 2% fat cheddar cheese....also less then recipe, olive oil in place of butter, less bread crumbs, garden herbs: oregano, basil, and added some garlic powder. Forgot to add the parmeson but was super-great anyway. This dish really perfect to add the fresh corn to.

Like some others, I adjusted the recipe to what I had and prefer. Had leftover corn-on-the cob and cut that to use, not canned. Used our own home canned tomatoes so no green chillies. Added some salsa and chili powder to it. Used far less egg noodles. Want more meat then noodles/carbs. Used real cheese, shredded 2% fat instead of fake cheese. Taste great and worked well! Will likely make again

Bacon Water Chestnut Rolls

We made this at Meadowbrook Hall in Rochester, MI for various functions and dinners years ago when I worked there in the kitchen. I had a hard time NOT eating them myself! Great to see this recipe again.

Quick Cassoulet

Made it as directed except added some chopped green pepper and did not drain the tomotoes, used our own canned homegrown tomatoes. Did add some vegetable broth, about 1/3-1/2 cup. The thyme I have is rubbed so its concentrated and I used 1/2 tsp. It came out absolutely perfect! Perfect taste and consistancy!!! Will definitely be making this again. Hearty and healthy and cost-saving.

Smoked Sausage and Zucchini Saute

Very good!!! We grow zucchini in our garden so I'm always looking for ways to fix it. This was very good. I used garlic powder, basil, oregano from my herb garden and our garden fresh tomatoes. Served with potatoes instead of rice. YUM!

Brigid's Blackberry Pie

OMG, I nearly fainted when I heard from my husband of 43 years, for the first time, "that was the best pie I've ever had in my life!" He rarely compliments but never this effusively. And I have to concur...likely the best I've ever made. I did use 1-1/4 cups sugar, the 1/2 cup flour plus 2 Tbsp. cornstarch - since so many said it was runny. And it turned out perfect! Not a bit runny. I added 1/4 tsp. nutmeg and 1 tsp. cinnamon as well. Will be making this winner again!!
