Carrot Cake III
I changed nothing and it was fabulous! So moist! I baked it in a 10" springform pan for 50 minutes. Oh...I did add a generous cup of golden raisins since that's what we're accustomed having in a carrot cake, but as for the other ingredients, don't mess with perfection! :)

One Bowl Chocolate Cake III
Exceptionally moist, rich cake! Like others suggested, I upped the cocoa to 1 cup, baked it as a snack cake in a 9 x 13 inch pan lined with parchment paper for 35 minutes, and it was so easy to cut and serve. I've been "snacking" on it since it cooled enough to do that! Hubby loved it and I'm pretty sure our grandson will give it his seal of approval. One bowl, no creaming butter, it was as easy as dumping everything in, then adding the cup of water I boiled in a Pyrex container in the microwave! I won't be looking for another chocolate cake recipe! Oh....and for anyone who needs the kind of cake-pop recipe that involves mixing baked cake with frosting, this is it! Thank you!

Downeast Maine Pumpkin Bread
I've reviewed this before, but I had to add that this time I added golden raisins in one batch, craisins in another, and of course I always double the cinnamon. This continues to be a staple here...I freeze loaves to have with afternoon tea, night-time coffee, and the muffins are THE best, according to our grandson! I can't recommend this recipe highly enough! I just dump everything into my Kitchenaid and it does all the work...makes me look,good every time! Freezes beautifully whether muffins or loaves...stays moist and SO scrumptious! I get about 36 muffins and a loaf from one recipe. You must try it! Enjoy!
