Cousin David's Slow Cooker Brisket

I am making this for the second time! This was a great dish to make ahead of time for a party-- I sliced up the brisket after it cooked - along with the sauce - then showed up to the party with a basket of rolls so as an appetizer - you could take the small rolls and put the brisket on them. Everyone loved this dish - and when the brisket was gone some were just dipping leftover rolls in the remaining sauce! Very tasty and EASY!!!

Quail With Rice

I have been looking for a good recipe for fresh quail for awhile now! My husband brings home the breasts from hunting trips - and this was great for using them up! I didn't have long grain rice, but had two packages of the Uncle Ben's Wild Rice that you heat up in the microwave - I mixed those two packages with the onion and carrot saute (I also added a little butter to that saute mixture) and then because the rice was already pretty soft, I just doused the mixture with about a 1/2 cup to 3/4 cup of chicken broth. I also used one piece of bacon per quail breast - cut in half and I laid them on the quail breasts in an X shape - looked nice in the pan. This really was yummy -- I'd give it a 5 but it seemed that maybe the breasts were just a little dry ... maybe because I used the soft rice and didn't put in as much chicken broth -- still, I will use this recipe again! Our quail was from Kansas too! Thanks!

Broccoli Salad V

Great! I did not have the vinegar the recipe called for, so I used balsamic vinegar instead - I mixed it with regular ol' Ranch Dressing - I used a little less dressing that the recipe called for - I don't like the dressing to overpower the food.

Caribbean Coconut Chicken

This was a great change-up to our regular chicken dinners! I had wanted to use something with coconut milk! I also read the other reviews, and changed just a bit -- I sauted minced garlic in canola oil before adding the chicken to the pan - I also used red and orange peppers (out of green!) so this was great color! I also added crushed pineapple to the mix (when adding the coconut milk) and it was a great compliment to the coconut! After the chicken and sauce cooked in the oven, I added sliced almonds to the top of the dish - they browned as the mixture cooked, and it was a great added touch! I also used Lawry's seasoning salt on the chicken as it cooked - it seemed to need a little salt for our taste! Overall - a really great change of pace! I served it over jasmine rice (sticky rice as the kids call it!) Forgot to mention - we only used about 1/4 cup chopped onion - and the pineapple I added, was about 1/2 can crushed pineapple. No pepper flakes for this crew!

Orange and Maple Glazed Turkey

My family raved and my husband said I redeemed my turkey cooking ability since my thanksgiving turkey was a flop! I only used a 7 lb breast with this recipe, but it was great! The gravy was delicious as well!

Taco Bean Burgers

I used one lb of ground beef that I browned with 1/4 diced onion. Instead of baked beans, I used 1 can of black beans. Topped burgers with diced tomato, lettuce and grated cheddar cheese. Just like a taco on a burger bun! Nice change!

Nettles Dried Beef Dip

I added a little more horseradish, garlic salt, and dill - - it was very good. I can see where it might taste better the next day, as the flavors have more time to meld! It was very good - and I would make it again!

Cheddar Baked Chicken

I have made this twice now - and get rave reviews from those who eat it! I doubled the recipe for a Christmas Eve family dinner. It was so good. I think next time I"ll break up the rice krispies just a little more - as they are a bit recognizeable, and seems funny when someone asks... Are there rice krispies on this chicken? Definitely a keeper!

Fruit Salad

I added a sliced banana and used fresh pineapple chunks cut into bite sized pieces (instead of canned pineapple) - Everyone seed to really like it. I served it for a birthday dinner - the birthday girl asked to take the leftovers home! It was really delicious!

Easy Taco Pizza

I did change it a little ... I used a pre-baked thin pizza crust so that made it really easy! I put down a mild La Victoria salsa for the pizza sauce. I used a pound of ground beef with a bit of onion and taco seasoning packet for the meat. I crunched up tostitos corn chips to go on top of that layer. I used a weight watchers mexican cheese mix for the next layer (even though I never like using lowfat ANYTHING!) and added the sliced black olives on top of that. After baking, and as I served it - I topped it with shredded lettuce, and diced red pepper and avacado. (I was out of tomato, and the red pepper added great color and FLAVOR!) My entire family LOVED it!

Slow Cooker Thanksgiving Turkey

This turned out really GREAT! I used a butterball boneless turkey breast and it even came with a gravy packet that I used for the sauce. The flavor was really wonderful. The bacon crumbles made a difference - adding a really nice flavor to the gravy. I did strain the gravy off and use on potatoes and the turkey. My husband and all three children cleaned their plates! Thanks for the recipe!

Chicken Spectacular

This was good - but I made a few changes -- I only had Uncle Ben's Wild Rice, so I used that with just a little of the seasoning mix it comes with. Also - I sauteed the chicken with onion in olive oil so onion wasn't as powerful. I reduced the Mayonaise to only about three tablespoons - as it adds less fat, and we don't like to taste too much of it in casserole recipes. At the end, I sprinkled Crispy Onions on top (the kind that you use on Green Bean Casserole - was a nice flavorful addition!)

Cauliflower Gratin

Delicious! I followed this closely - but used fresh cauliflower - and microwaved it for about 4 min. in a large bowl with a little water in the base. I sprinkled garlic salt into the soup and milk mixture in place of a garlic clove. After mixing the cauliflower and soup mixture, I sprinkled with bread crumbs, bacon crumbles and grated white cheddar cheese (didn't have swiss on hand). The family members that like cauliflower, couldn't get enough! It was so good.

Broccoli Rice Casserole

Very good -- I used fresh broccoli (steamed it but added to the dish while it was still a bit crispy) I also diced up two chicken breasts - sauteed them in olive oil and seasoned with lawry's seasoning salt before adding to the rest of the dish -- makes a "Meal-in-one-Wonder"!

Hearty Beef Enchiladas

These are a great way to use ground beef. I use the ten minute enchilada sauce from this site in place of canned enchilada sauce. I also sub black beans for the chili beans and add just a little more spice to the ground beef mixture.

Basic Chicken Salad

Very good basic recipe. I toasted the almonds and added a little salt, garlic salt and pineapple tidbits. My girls couldn't get enough. We put it on sandwiches but think this would also be good served on a bed of lettuce.

Chocolate-Candy Cane Cookies

Just average... It's a lot of work, and the flavor is really kind of bland. I took these to a holiday party at work, and it was the first time I have taken something and the serving plate didn't come back empty. People let them sit.... I won't make these again!

Basil Shrimp

WOW! This is a KEEPER! I made one small mistake in leaving out the mustard, but realized it about 10 min. after is was in the refridgerator - I added the mustard to the bowl of marinating ingredients, and mixed it up well. This was so delicious - my family could not get enough!

Silver's Savory Chicken and Broccoli Casserole

I made a few changes -- but it turned out pretty good! I used Reams Egg noodles - partially cooked version - they cook much faster in boiling water. These are thicker noodles, so made it more like a chicken and dumplings taste. I was also low on broccoli (I used fresh) - so I sprinkled frozen mixed veeggies on top of the noodles before adding chicken mixture and sauce. I didn't have provolone cheese - so just used cheddar - and sprinkled some toasted, sliced almonds on top with the cheese- was a nice addition!
