Chocolate-Candy Cane Cookies

Just average... It's a lot of work, and the flavor is really kind of bland. I took these to a holiday party at work, and it was the first time I have taken something and the serving plate didn't come back empty. People let them sit.... I won't make these again!

Candied Sweet Potatoes

Beef Tenderloin With Roasted Shallots

Excellent - but a LOT OF WORK!!! I had not made a beef tenderloin before - so stressed about it a bit.... I think that I could have cooked it a little longer. This was very RED at 127 degrees. That was Med. Rare in the recipe - but really felt it looked very rare to our family that likes steak at Medium. This was so tender- and the gravy/sauce was fantastic!!!

Cheddar and Olive Balls

Not that great. I felt the breading was bland and maybe I put it on too heavy around the olive. Those who don't like green olives really won't like this. I took these to a party, and have to say - really, no one liked them. We threw most of them away at the end of the night!

Cousin David's Slow Cooker Brisket

I am making this for the second time! This was a great dish to make ahead of time for a party-- I sliced up the brisket after it cooked - along with the sauce - then showed up to the party with a basket of rolls so as an appetizer - you could take the small rolls and put the brisket on them. Everyone loved this dish - and when the brisket was gone some were just dipping leftover rolls in the remaining sauce! Very tasty and EASY!!!

Japanese Zucchini and Onions

Delicious! I only had soy sauce on hand - so used about 1 and a half tablespoons plus just about a 1/2 teaspoon of fine sugar for my sauce. The toasted sesame seeds add a great flavor! This is a keeper!

Shrimp Scampi V

Delicious! I just made this and my family are every bite! My husband asked me to add this to the regular "rotation". I made it with only three cloves of garlic and added a little garlic salt as it cooked. I also put a little fresh squeezed lemon juice over the pasta in it's last couple of minutes of cooking. Great Dish!

Basil Shrimp

WOW! This is a KEEPER! I made one small mistake in leaving out the mustard, but realized it about 10 min. after is was in the refridgerator - I added the mustard to the bowl of marinating ingredients, and mixed it up well. This was so delicious - my family could not get enough!

Fruit Salad

I added a sliced banana and used fresh pineapple chunks cut into bite sized pieces (instead of canned pineapple) - Everyone seed to really like it. I served it for a birthday dinner - the birthday girl asked to take the leftovers home! It was really delicious!

Quail With Rice

I have been looking for a good recipe for fresh quail for awhile now! My husband brings home the breasts from hunting trips - and this was great for using them up! I didn't have long grain rice, but had two packages of the Uncle Ben's Wild Rice that you heat up in the microwave - I mixed those two packages with the onion and carrot saute (I also added a little butter to that saute mixture) and then because the rice was already pretty soft, I just doused the mixture with about a 1/2 cup to 3/4 cup of chicken broth. I also used one piece of bacon per quail breast - cut in half and I laid them on the quail breasts in an X shape - looked nice in the pan. This really was yummy -- I'd give it a 5 but it seemed that maybe the breasts were just a little dry ... maybe because I used the soft rice and didn't put in as much chicken broth -- still, I will use this recipe again! Our quail was from Kansas too! Thanks!

Asian Salad

My entire family (3 kids and husband)devoured the salad! I made the dressing and toasted the noodles and almonds the day before - so the next day, when I intended to serve it - I tossed it together just before dinner! It's out of this world!

Silver's Savory Chicken and Broccoli Casserole

I made a few changes -- but it turned out pretty good! I used Reams Egg noodles - partially cooked version - they cook much faster in boiling water. These are thicker noodles, so made it more like a chicken and dumplings taste. I was also low on broccoli (I used fresh) - so I sprinkled frozen mixed veeggies on top of the noodles before adding chicken mixture and sauce. I didn't have provolone cheese - so just used cheddar - and sprinkled some toasted, sliced almonds on top with the cheese- was a nice addition!

Caribbean Coconut Chicken

This was a great change-up to our regular chicken dinners! I had wanted to use something with coconut milk! I also read the other reviews, and changed just a bit -- I sauted minced garlic in canola oil before adding the chicken to the pan - I also used red and orange peppers (out of green!) so this was great color! I also added crushed pineapple to the mix (when adding the coconut milk) and it was a great compliment to the coconut! After the chicken and sauce cooked in the oven, I added sliced almonds to the top of the dish - they browned as the mixture cooked, and it was a great added touch! I also used Lawry's seasoning salt on the chicken as it cooked - it seemed to need a little salt for our taste! Overall - a really great change of pace! I served it over jasmine rice (sticky rice as the kids call it!) Forgot to mention - we only used about 1/4 cup chopped onion - and the pineapple I added, was about 1/2 can crushed pineapple. No pepper flakes for this crew!

Broccoli Rice Casserole

Very good -- I used fresh broccoli (steamed it but added to the dish while it was still a bit crispy) I also diced up two chicken breasts - sauteed them in olive oil and seasoned with lawry's seasoning salt before adding to the rest of the dish -- makes a "Meal-in-one-Wonder"!

Broiled Tilapia Parmesan

I also added a clove of minced garlic and used fresh basil leaves I chopped up in the food processor -- was just delicious! I also broiled the fish on in a jellyroll pan lined with foil and spread a thin layer of olive oil onto the foil -- the flavor was great - will definatelly pass this one on - and make it again for my family!

Vegan Black Bean Soup

I only had two cans of black beans on hand, so cut the recipe in half (except for the carrots and celery) It was very veggie! I also subbed Beef Broth for Veggie Broth (all I had, obviously, NOT a vegetarian) Still, this recipe was excellent! It makes a lot! Loved the idea to serve with cornbread!

Marinated Tuna Steak

I've made this twice now. My 3 children loved it and asked for seconds - that' s very unusual! I marinated it a longer than 30 min - the marinade smelled so good! We're the process of moving, and don't have a BBQ grill now, so cooked it on a George Forman grill -- so FAST and EASY!!! Seved with Jasmine Rice and a vegetable stir fry .
