Cauliflower Gratin

Delicious! I followed this closely - but used fresh cauliflower - and microwaved it for about 4 min. in a large bowl with a little water in the base. I sprinkled garlic salt into the soup and milk mixture in place of a garlic clove. After mixing the cauliflower and soup mixture, I sprinkled with bread crumbs, bacon crumbles and grated white cheddar cheese (didn't have swiss on hand). The family members that like cauliflower, couldn't get enough! It was so good.

Holly's Hummus

I felt it needed a little tahini(added large tablespoon to the recipe) to feel like real hummas. I thought this was very good! I doubled the recipe and so may have used a little more basil and cilantro leaves.

Honey Mustard Grilled Chicken

My family says this is a "keeper"! Have to say I followed just about exactly - but I used deli mustard that had chunky mustard seeds in it, and worchestershire sauce for the steak sauce. I used chicken breast tenders, and soaked them in the sauce for about an hour in the fridge before grilling. Served with wild rice, corn on the cob and green beans. Delish!

Orange and Maple Glazed Turkey

My family raved and my husband said I redeemed my turkey cooking ability since my thanksgiving turkey was a flop! I only used a 7 lb breast with this recipe, but it was great! The gravy was delicious as well!

Hearty Beef Enchiladas

These are a great way to use ground beef. I use the ten minute enchilada sauce from this site in place of canned enchilada sauce. I also sub black beans for the chili beans and add just a little more spice to the ground beef mixture.

Curried Coconut Chicken

Taco Bean Burgers

I used one lb of ground beef that I browned with 1/4 diced onion. Instead of baked beans, I used 1 can of black beans. Topped burgers with diced tomato, lettuce and grated cheddar cheese. Just like a taco on a burger bun! Nice change!

Delicious Pumpkin Bread

Chicken Scampi II

Very good - I did alter a bit based on other comments - I added a dash of white wine and worcheteshire sauce. I also added some fresh basil cut basil at the end. I served with fresh ground parmesan cheese -- Delicious!

Hamburger Casserole

My husband loved it -- i did tweak it a little. I used a packet of williams chili seasoning and a can of red kidney beans instead of taco seasoning and canned chili. I also added garlic salt and a small can of diced green chilies. I used frozen sweet corn instead of caned corn. It was very good.

Nettles Dried Beef Dip

I added a little more horseradish, garlic salt, and dill - - it was very good. I can see where it might taste better the next day, as the flavors have more time to meld! It was very good - and I would make it again!

Gourmet Chicken Pizza

This is a keeper! My family of 5 all loved it! A key ingredient were the FRESHLY GROWN tomatoes of SUMMER! I also seasoned the chicken as it cooked with a little garlic salt and Lawry's seasoning. I added a little diced green pepper with the green onion - and cut down on the onion. The green and red color with the cheddar cheese make a nice presentation! I was afraid of the ranch - and may have gone less than what recipe called for -- but WOW -- it was a nice touch for flavor!

Crab Cakes III

A quote from my husband -- "Ridiculously GOOD!" I had to size the recipe down to 6 servings -- and now we wish we would have doubled it! It was very good. I browned ours in a small amount of olive oil. I also did not have the seafood seasoning it called for - so I used Lawry's seasoned salt, a little ground pepper and a dash of garlic salt. YUMMY!

Easy Taco Pizza

I did change it a little ... I used a pre-baked thin pizza crust so that made it really easy! I put down a mild La Victoria salsa for the pizza sauce. I used a pound of ground beef with a bit of onion and taco seasoning packet for the meat. I crunched up tostitos corn chips to go on top of that layer. I used a weight watchers mexican cheese mix for the next layer (even though I never like using lowfat ANYTHING!) and added the sliced black olives on top of that. After baking, and as I served it - I topped it with shredded lettuce, and diced red pepper and avacado. (I was out of tomato, and the red pepper added great color and FLAVOR!) My entire family LOVED it!

Basic Chicken Salad

Very good basic recipe. I toasted the almonds and added a little salt, garlic salt and pineapple tidbits. My girls couldn't get enough. We put it on sandwiches but think this would also be good served on a bed of lettuce.

Chicken Enchiladas V

This was VERY GOOD! I made it and used the recipe for "ten minute enchilada sauce" that is on this site -- it was so delicious!!! My kids who thought that they didn't LIKE enchiladas ate every bite - and one even had seconds!

Cheddar Baked Chicken

I have made this twice now - and get rave reviews from those who eat it! I doubled the recipe for a Christmas Eve family dinner. It was so good. I think next time I"ll break up the rice krispies just a little more - as they are a bit recognizeable, and seems funny when someone asks... Are there rice krispies on this chicken? Definitely a keeper!
