Southwest Chicken

Easy and delicious! Instead of cumin and chiles, we put some Emeril's Southwest Spice on the chicken and then followed the recipe from there. Couldn't be easier and was very tasty! My husband likes things spicy and I don't, and we were both very happy with the result! (I don't work for Emeril, just happened to have the spice in the house.)

Fried Plantains

Wonderful Waffles

Dad's Double Whole Grain Pancakes

Delicious and easy to make! Others are correct by warning that the batter is thin (I actually add a little extra whole wheat flour to thicken just a bit) but the pancakes turn out light and tasty.

Slow Cooker Chicken and Dumplings

This was the very first slow-cooker recipe I've ever made, and I'm giving it 5 stars for being as easy and tasty as I hoped it would be! I followed others' advice and used 1 can chkn soup and 1 can celery (one can was the healthier, lower-salt, lower-fat version of their soup). I also added 3-4 large carrots, 3 diced potatoes, and a half bag of frozen peas. I halved the butter it called for, and halved the biscuits. It came out yummy, not too salty, good consistency. Could probably use some herbs thrown in, if I knew more about herbs & spices. But it made a good warm meal that my husband and 2 year old also enjoyed.

Roasted Beets 'n' Sweets

Easy and very tasty. I didn't have onion so I used some onion powder instead, and I didn't use sugar, as I thought it wasn't necessary. I wanted some green in my side dish so I threw some frozen cut green beans into the sweet potato mixture. It all came out great!

I love this dish, since it's so easy and really yummy. I only make the simplest recipes! I make it just according to the recipe. My husband finds it too sweet for his taste, and he likes things spicier than I do. But he still enjoys this a lot.

Sloppy Joes II

I've never made sloppy joes before. This was really easy and yummy! My little boys liked it too. Husband thought it was too sweet, and he's probably right - I used less brown sugar than it called for but with the ketchup sweetness, it could use even less or none.

Bella's Mac and Cheese

4 stars because my kids (ages 2 & almost 5) loved it and gobbled it up! And it was easy. I used the general proportions of the recipe but to make much less. Melted everything in a big pyrex measuring cup and just stirred whole grain 3-color macaroni right into the same dish. Husband and I ate the leftovers but just because it was there. I liked it but it was bland.

Grandma's Slow Cooker Vegetarian Chili

This is now one of our favorite crockpot meals, and I make it every couple weeks! I use crushed tomatoes instead of chopped, as my husband and I both preferred the smoother texture of the chili when I made it that way. I often don't have the black bean soup on hand but just replace it with black beans and it still comes out good. I cook it on high for at least 3 hours. We eat this with a crusty loaf of wheat bread and it's so delicious! Great for freezing. Thanks for the recipe!

Butter Chickpea Curry

Yum! I've never made Indian food before - this was really easy, pretty quick and really delicious! Made it according to recipe except used a large potato, sweet potato, and about half a cauliflower. Flavorful enough for husband, but not too spicy for me.

The Best Chocolate Chip Cookies

My cookies spread too much and were kind of flat - - I didn't add enough flour perhaps - but it is a delicious cookie. I made some of them with white chocolate chunks instead, and my husband and I agreed that the taste of the macadamias came through better. We thought the chocolate chips overpowered the subtle flavors.

Good Old Fashioned Pancakes

Delicious!! I added blueberries and my husband said they tasted like blueberry muffin pancakes! I don't have a sifter so I didn't sift, I just mixed the dry ingredients. I used salted butter so I used half the salt. I didn't overmix. They came out so fluffy and tasty!

Baked Oatmeal II

Just tried this for the first time - it came out great! Halved the brown sugar as others suggested. Used a few raisins, not cranberries. I think apple chunks would be even better! Used a 9x13 pan, but baked for only 30 minutes. Came out soft and moist and delicious, nice light balance of flavors.

Quick Peanut Butter Cookies

I made this once before and it was too crumbly. This time I took others' advice to make the balls small, and added a few teaspoons of flour (and I halved the recipe but still used a whole egg). I also used some brown sugar in it. Baked for 8 minutes, they came out so good, very moist, not falling apart at all. Yum!

Apricot Noodle Kugel

I didn't follow this exactly - but I used the basic amounts for a quick kugel with the ingredients I had on hand. I used a 12-oz box of tri-color twist pasta. I left out the apricot nectar and raisins - and even with a reduced amt of sugar it was plenty sweet for us. The rest was like the recipe but with a bit more cream cheese and 4 eggs instead of 3. I just sprinkled cinnamon and sugar for a topping. Came out great!
