Hearty Hot or Cold Roasted Tomato Soup

roasted a whole head of garlic- so it wouldn't get too dried out. used a few cherry tomatoes. added just a touch of cream to thicken. awesome! used more basil too.

Asparagus, Chicken and Penne Pasta

I like to grill the chicken for more flavor (sprinkle with garlic, sp) then cut up into small chunks and add to skillet with grape tomatoes. I've added feta before which was good too. the tomatoes give it some liquid.

Pork Tenderloin in Bourbon

really good marinade. easy to throw together. I only marinated 45 min. we wrapped bacon around it and grilled it for about an hour on the green egg. we used a plate setter on the green egg and grilled 3 at a time. they didn't brown that well. temp 325. next time will do a warmer temperature and maybe no plate setter. we heated up the marinade and served with it. very good.

Kabobs

I haven't tried it yet- just wanted to respond to one that used fresh pineapple. don't add fresh pineapple to the marinade. I did this and the chicken turned out mushy also -horrible. we ordered pizza.

Hawaiian Chicken Kabobs

for some reason the chicken turned gooey. I marinated w/ the pineapple and added shrimp. the veggies were marinated separate and they were fine. they looked good, but we ordered pizza!

Grilled Asian Chicken

Great and easy recipe. I added a little brown sugar also. I made it with "Betsy's Mandarin Orange Salad" and "Sesame Broccoli Salad" all very good.

Sausage Pasta

4 stars with the changes I made. I added red wine (1/2-1 cup and reduced it longer) then added heavy whipping cream until thick and creamy. I threw in canned asparagus tips and fresh spinach. Great meal!!

Easy Potato Sausage Soup

this was a great soup. My husband loved it. I left out the green peppers and potato flakes. I used fresh carrots. the polish sausage I used was smoked which gave it a nice smokey flavor. I added a little cheese at the end.I used chicken broth instead of water for more flavor. I will make this again. when I heated it up the next day I just added a little milk to thin it out.

Sesame Tilapia

this was great. I probably used a little more sesame oil. added sesame seeds. didn't measure the seasonings- just sprinkled both sides w/ oregano, basil, garlic, salt/pepper. didn't marinate. served over wilted spinache. My husband loved it. We will definately make this again.

Cherry Chicken Lettuce Wraps

Very good. I added the mushrooms, waterchestnuts, dried cherries, garlic, pepper flakes, etc. the bibb lettuce kept falling apart. My husband loved it. said it blew "Chili's" away. will make it again. we serve with Good Seasons Asian Sesame w/ Ginger dressing.
