Scalloped Potatoes and Onions

Reviewed: Nov. 16, 2010
We very much enjoyed this recipe. I doubled it because of guests but I only used 7 potatoes (maybe my potatoes were just very large) and they filled a 13x9 pan. I had this on the bottom shelf in the oven...maybe a mistake because they were very, very done in 1 1/2 hours. Added some cheddar cheese and melted/browned under the broiler. Will make this again...just enough leftovers for my son-in-law to put in his lunch tomorrow.

Chicken Noodle Casserole

Reviewed: Nov. 7, 2010
I have to agree with many posts in regards as to how many different dishes are needed to make this casserole. But what does it really matter when it tastes this great! ;) I used medium noodles (340 grams), just not a fan of wide noodles. I made this ahead, cooked the noodles for 5 minutes, ran them under cold water to stop the cooking. Also let the sauce cool down a bit. Put everything in a 13x9 pan and cooked it covered in 350 oven for 35 to 40 minutes. We all loved it...even my little 3 year old granddaughter said, "Yummy!".

Sylvia's Ribs

Reviewed: Nov. 1, 2010
I have been using this recipe for some time now and then forget to review. I have always boiled my ribs for an hour but never really had a great recipe for the sauce...that has now changed. This is absolutely wonderful!!! If you love your ribs, this is the way to do them! I've also done them this way in the slow cooker...just as good.

Seven Layer Tortilla Pie

Reviewed: Oct. 4, 2010
Excellent! Followed the advice of others: 1. used shredded chicken, mixed with a little salsa, as the center layer. Because of this extra layer I added 5 minutes to the cooking time. 2. baked three tortillas for 5 minutes so the bottom layers would not get soggy 3. used Tex-Mex cheese. 4. used a 9" spring form pan. The only change I would make is to add more cilantro...just personal preference.

Savory Herb Rice

Reviewed: Oct. 20, 2009
This recipe is excellent!!! I made just a few changes. As per another reviewer, I used a can of chicken broth and topped it up with water to make 2 cups. I therefore omitted the chicken/vegetable bouillon. I also did not add the dried minced onion...just personal preference. My daughter said this tasted like professional rice. Great compliment Suzy!

Mark's English Sausage Rolls

Reviewed: Oct. 20, 2009
This is excellent. My son-in-law is from England and as he was coming through the door he was saying how wonderful it smelled in the house. I made only a few changes. I really dislike mustard so I brushed the dough with A-1 Sauce. I added 1/2 tsp. sage and 1/8 tsp. nutmeg to the ground pork. I browned the pork...am I ever glad...there was quite a bit of fat. As suggested by someone else, I cooked it on a Pampered Chief stone for 10 minute. I then checked it every 3 minutes. As suggested, the perfect cooking time on this stone is 13 - 15 minutes. Thank you so much for submitting this. P.S. My son-in-law loved it!!!

Slow Cooker Chicken Taco Soup

Reviewed: Apr. 29, 2009
This is ok...would I make it again?...not so much. I had the slow cooker on high and still I found the chicken tough. 3 "whole" chicken breasts is a lot...we found it a bit too much. This wasn't terrible - just very average...

Beth's Scalloped Cabbage

Reviewed: Apr. 8, 2009
Very good! I did what others recommended: used Cheddar cheese, saltine crackers and drained the cabbage for an hour before putting it in the oven. Everyone loved this except for my 17 year old son...go figure!

Potato Chips

Reviewed: Mar. 26, 2009
Excellent!! The trick is to cut them very, very thin. I had to cut the potato by hand because my mandolin didn't cut them thin enough. My microwave is old so I had to cook them quite a bit longer. I put parchment paper in the microwave and put the slices directly on the paper. I sprayed them with buttery Pam before baking. Yum!

Slow Cooker Pepper Steak

Reviewed: Nov. 2, 2008
Very good...I used salt reduced soy sauce and we found it plenty salty...never added the additional salt. Only used one green pepper. While I was browning the meat, I added the onion for browning. It smelled wonderful while cooking!!

Thanksgiving Leftover Casserole

Reviewed: Oct. 14, 2008
This is excellent - however I don't understand how one cup of cooked turkey is going to cover a 13x9" pan. My daughter put a generous amount of turkey in the dish. Also, 2 cups of mashed potatoes would make for a very thin layer - she added a generous amount here as well. We added the following to the salt and pepper: one browned onion (omitted the onion powder), 1/2 tsp. thyme, 1/2 tsp. rosemary and 1 tsp. sage (as suggested by others). We also added a bit more cheese. I can't wait to try this with leftover chicken!!

Cha Cha's White Chicken Chili

Reviewed: Jul. 3, 2008
Excellent recipe with a few revisions: 1 tsp. of cayenne is way too much for our family (next time only 1/4 tsp.); added three (instead of two) cans of chicken broth; used 2 cans of green chile peppers (no diced jalapeno peppers); diced up chicken and cooked it along with the onion. Even though the cayenne pepper made this way too hot, we enjoyed it because I was able to dilute it down with the extra can of chicken broth. Thank you for sharing this with us.

Vegetable Beef Soup II

Reviewed: Jan. 2, 2008
This is very good hamburger soup. My changes: added 2 cloves of garlic, 5 cups salt reduced beef broth and 1/4 tsp. pepper...omitted bay leaf, salt, and 2 beef bouillon cubes. I was in a hurry and needed to be gone from the house for awhile so I heated up the broth and tomatoes before adding all the ingredients to my crockpot. I put it on high and it was all done in 3 hours. This makes a lot so I'm freezing the left overs. Made house smell great!!

Slow Cooker Stuffing

Reviewed: Dec. 26, 2007
Excellent stuffing. My changes were as follows: 1/2 c. butter, no parsley, no mushrooms, no marjoram, NO salt (it doesn't need it because even with salt reduced broth, there is enough salt), start with 2 c. broth, no eggs. I stuffed the turkey with the first batch and then made a second batch for the crockpot. I added 2 c. broth to the stuffing for the bird but in the crockpot I found it needed a bit more. Make sure to spray your crockpot with Pam on the bottom and sides to keep it from burning. Also, it was done on low within 5 hours. Great recipe...it will be the stuffing I use from now on.
