Grilled Swordfish with Rosemary

Reviewed: Jul. 22, 2009
I marinated the fresh swordfish for about 2 1/2 hours, but I didn't make the sauce. Ordinarily, both my husband and I like swordfish a lot. This recipe was uninspiring and bland - my husband really disliked it. I thought it was ok at best. Definitely won't be making this again!

Pesto Cheesy Chicken Rolls

Reviewed: Aug. 6, 2008
I, too, didn't roll the chicken. I used thin chicken breasts and spread freshly made walnut pesto and a couple of spoonfuls of roasted garlic-flavored over the chicken, baked it at 350 for about 15 minutes. Also, I added an ounce or so of dry white wine to the dish after it was in the over for about 10 minutes. It was liquid-y when I added the mozzarella, but the liquid had reduced when I took it out of the oven. My husband (picky) really liked this dish, and I thought it was different and worth making again.

Delicious and fresh-tasting! I added a little less salt and tomato, but kept the rest of the recipe intact. I will definitely make this one again.

Southwest Chicken

Reviewed: Sep. 1, 2005
Both my husband (fussy) and I loved this! It was easy to make, too. However, I made a few minor changes. On the advice of other reviewers, I coated the chicken breasts before browning, but I used fajita mix instead of the suggested taco mix. I didn't have tomatoes with green chilies, so I used a can of regular diced tomatoes and added some ground cayenne pepper. I used an ear of fresh corn cut off the cob instead of canned. When I finished cooking, I sprinkled a little fresh cilantro over the top. Very yummy, a little spicy, and a definite dish to make again!

Bob's Mexican Stuffed Chicken

Reviewed: Sep. 1, 2005
I made this one a couple of weeks ago, but kept forgetting to review it! I left out the fajita seasoning and coated the chicken with the corn flake crumbs mixed with ground cayenne pepper. I omitted the mushrooms (hubby hates them!) and used diced red and orange pepper only. I followed the rest of the recipe, except that I sprinkled extra salsa on top of the chicken along with the rest of the cheddar. You might need to alter the sooking time since I found that the chicken wasn't cooked through on all of the pieces. We had to put some back in the oven so that we weren't eating rare chicken!! The end result was very savory and delicious.
