Onion and Sausage Pizza

Really yummy-husband and I loved it! I only used 1 onion (it was a huge one!), and I hollowed out the bread halves just a little so they wouldn't overflow with toppings. Awesome!

Creamy Chicken with Corn, Tarragon and Tomatoes

Wonderful flavor, even though I couldn't find fresh tarragon anywhere ( so I used dried leaves). The couscous just soaked up the wonderful sauce. You can play with the ratio of stock to cream, and cut out a little of the fat. Also, try sauteeing your chicken in olive oil, or even non-stick spray to make it a little healthier.

wonderful but make sure your pan is big enough to evenly sautee all the veggies (and not have to steam them as well!), and add a lot of salt!

Buffalo Chicken Strips II

Sooo good. I added twice the amount of hot sauce, though. I cut the chicken into bite-size pieces before browning, and served along side celery sticks with the dip as an appetizer. Wonderful!

The Best Banana Pudding

Soooo good...I did a layer of cookies, then bananas, then pudding, then cookies, bananas, and pudding on the top. Delicious!!!! Make sure to use good vanilla.

Delicious Ham and Potato Soup

Good, but not great. I guess my ham wasn't salty enough, because I omitted the buillion but ended up having to add a lot of salt back in. I used a combination of water, light beer, and chicken broth instead of just water, added 3/4 can of corn, doubled the onion, and added 1 cup of shredded cheddar at the end. It was definitely good and we ate all of the leftovers, but it could've used a little more flavor!

Skillet Herbed Chicken with Mustard

This was awesome, and the sauce topped it off. I only used 1 T. of tarragon and 1 T. of thyme. It tasted wonderful.

Bacon Water Chestnut Rolls

i've made these since i was a kid...we make them in the microwave...just layer between paper towels and microwave until back is crisp (about 6-8 minutes total)...we just dip them right into Catalina dressing!

Sadie's Longboy Cheeseburgers

This is one of my favorite childhood meals. We always brown the meat mixture first before filling the bread with it and just bake for a short time. We also use shredded cheddar for the top and the kids always squirted extra ketchup on the top before eating, too! Plus, my mother would always give us the bread "insides" for a snack that day!

Farfalle with Vegetable Sauce

Not great. Definitely double the vegetables. All of my veggies were a little undercooked for my taste, though, especially the fresh green beans. Not very much flavor.

Salmon with Fruit Salsa

Salmon had a good taste out of the oven with the lemon, but I thought the salsa had a weird flavor. Probably won't make again unless I get a better recipe for fruit salsa!

Water Chestnuts Wrapped in Bacon

I've been eating these since I was little...we always make them in the microwave (between pieces of paper towel)...it takes less than 10 minutes. Instead of marinating in soy, we dip the finished chestnuts in Catalina dressing!

Fabulous Wet Burritos

Great. Followed the recipe exactly except I put the burritos with only the meat filling in a casserole dish and covered with the sauce. Bake covered for about 20 minutes at 350 degrees, uncover, top with cheese, and bake another 5-10 minutes. Top with lettuce, tomatoes, fresh cilantro, etc. Tastes better than restaurant burritos!

Sweet 'n' Hot Glazed Salmon

Glaze has a wonderful flavor and keeps the salmon moist. I used preserves instead of dried fruit and nectar. Worked great. However, my broiler and I do not get along, and it came out slightly burned on top and not cooked through!

WONDERFUL...add a little worchestershire sauce and ground mustard...a good bit of salt...PERFECTION! We also add sliced all-beef hotdogs to ours...awesome!

Three Greens and Fruit with Vinaigrette

oh, so good! i substituted balsamic vinegar for the white wine vinegar, increased the walnuts, only used one bag of spinach and one bag of romaine...also added some chopped bacon. it served about 12 people as a small side salad...delicious!
