Asparagus Angel Hair Pasta

Reviewed: Jul. 31, 2003
Great--I also squeezed some lime juice into the asparagus sauce, which gave the pasta a little more tang. Grilled chicken would be a wonderful addition for those "must have meat" men!

So delicious--even reheated! I used turkey sausage instead, and it was still wonderful!

Easy Red Beans and Rice

Reviewed: Dec. 17, 2003
Awesome! It did need cayenne pepper, tobasco, and a good bit of salt, but the tomatoes and beans together were great! I served over brown rise (it's better for you!).

Easy Caramelized Onion Pork Chops

Reviewed: Dec. 17, 2003
Good flavor---took a super long time for the onions to caramelize and I got a little anxious so I probably could've cooked them longer and made the dish even better!

Diane's Colcannon

Reviewed: Dec. 31, 2003
good and hearty...i cooked the bacon too long (my fault!) so it had a bit of a burned taste but the recipe is good.

i loved this! so did my husband and he is not a fish eater. i didn't have dijon mustard so mixed a little mayonaise in with some spicy brown mustard and only used kosher salt and pepper to season the fish. awesome and impressive and easy!!!

Emily's Famous Sloppy Joes

Reviewed: Dec. 31, 2003
tasted good and leftovers worked well, but not too different from canned sloppy joe sauce...maybe more seasoning would've helped...but the peppers in it were great.

Chicken with Couscous

Reviewed: Jan. 15, 2004
Good and filling. Would've increased the couscous if I were truly serving 4. Didn't have coriander seed and it tasted fine without it.

Turkey Rice Stew

Reviewed: Jan. 15, 2004
Wonderful!! Added a diced zucchini instead of peas because that's what I had on hand. Meatballs were too big for my taste so next time I'll either make them smaller or cut them. I used brown rice and it was great. Even better the next day but had to add a little more broth at the last minute because the rice soaks up the "soup" part! Thanks!

Salmon with Dill

Reviewed: Jan. 21, 2004
Fish was good, but salmon almost always is, no matter what you do to it! The only real flavor seemed to be in the butter. Maybe fresh dill would've been better. Just didn't have enough flavor for me, and I even added squeezed lemon juice at the end!

Delicious! Took suggestions and topped with whip cream and drizzled caramel sauce. Even used a graham cracker crust instead and it was still great!!!!

Make Ahead Lunch Wraps

Reviewed: Jan. 28, 2004
Good and easy and cheap! But needed some spicing up...I added fresh salsa, garlic salt, diced red onion, pepper, and cilantro to the mix, and served with sour cream and salsa. I halved the recipie and still made more than enough for 6 full wraps. I used brown rice instead of white and garlic herb wraps instead of plain flour tortillas. Just froze them last night so can't wait to see how they turn out! (We ate 2 fresh!)

Peanut Butter Noodles

Reviewed: Jan. 30, 2004
Loved this! I might try adding a tiny bit of lime juice to the sauce next time to brighten it up a little. Grilled/sauteed chicken would've been great, too. Wonderful flavor---much better than Chinese take-out!

Delicious Ham and Potato Soup

Reviewed: Feb. 4, 2004
Good, but not great. I guess my ham wasn't salty enough, because I omitted the buillion but ended up having to add a lot of salt back in. I used a combination of water, light beer, and chicken broth instead of just water, added 3/4 can of corn, doubled the onion, and added 1 cup of shredded cheddar at the end. It was definitely good and we ate all of the leftovers, but it could've used a little more flavor!

Broccoli Beef II

Reviewed: Feb. 8, 2004
Great. I did use a little more beef broth, and again added a little ginger and soy sauce to the actual beef and broccoli because it lost a lot of the taste when I discarded the marinade. Thought the noodles were a nice change, and leftovers were great. Thanks!

Ground Turkey Casserole

Great and easy. I did take the advice of adding about 3/4 can of diced tomatoes with oregano and garlic. I also added salt and pepper, and a little parsley over the top.

Jenny's Grilled Chicken Breasts

Tasted good, but not a whole lot different from any other grilled chicken recipe. I liked the hint of lemon juice, though.
