Peppered Bacon and Tomato Linguine

Good flavor. Could've used more tomatoes...I used 2 cans to make 6 servings and could've had another half or whole can. I sprinkled crumbled bacon and cheese on the top when done. Great.

Baked Ziti III

I cut the servings to 6, used one large can of good tomato sauce and 1 can diced tomatoes. Didn't have provolone so I upped the mozzarella a little bit. Yum.

American Shepherd's Pie

This was good but still needs tweaking. Like others, I used cream of mush. soup instead of vegetable soup, green pepper instead of celery, and I added a can of corn and some fresh garlic. It tasted a lot like creamed beef with potatoes on top. Next time I'll try another soup instead: golden mushroom, tomato, or even condensed beef stock. Used cheddar on top because it was all I had, and still tasted good.

Sweet 'n' Hot Glazed Salmon

Glaze has a wonderful flavor and keeps the salmon moist. I used preserves instead of dried fruit and nectar. Worked great. However, my broiler and I do not get along, and it came out slightly burned on top and not cooked through!

Mandarin Orange Chicken

Really good--did increase the OJ, cashews, and green onions, as well as season the flour before dredging chicken. Would not want to increase the hoisin, though, unless you are very used to the taste. Served over jasmine rice. Leftovers great, too.

Awesome and Easy Creamy Corn Casserole

Awesome! Definitely cut the cornbread mix in half and increase the amount of canned corns. I added about 1/2 cup shredded cheese and it was great!

Salmon with Fruit Salsa

Salmon had a good taste out of the oven with the lemon, but I thought the salsa had a weird flavor. Probably won't make again unless I get a better recipe for fruit salsa!

Great. Definitely omit the water...I only added about 1/3 cup and it was still a little runny. Make sure to season well with spices, salt, and fresh pepper. I might add a can of diced tomatoes, as well, next time. Serve over saffron rice for added flavor!

WONDERFUL...add a little worchestershire sauce and ground mustard...a good bit of salt...PERFECTION! We also add sliced all-beef hotdogs to ours...awesome!

Alternative Baked Salmon

Really good! I didn't use too much mayo...just enough to hold it together. I wouldn't really call it a paste. I will say that you definitely need to watch the broiler closely!

Chicken and Red Wine Sauce

This was just OK. Not really a whole lot of flavor, and the wine turns the chicken a very unappetizing purple. Chicken was moist but lacked flavor.

Avocado Soup with Chicken and Lime

One of the best soups I've ever made. I doubled the avacado because I love it. The lime juice was great and not overpowering at all. Topped it with shredded mexican cheese and sour cream. Awesome!

Cabbage Roll Casserole

Good, quick, and easy. I did add some worchestershire sauce and extra salt to the meat mixture. A little tomato paste might be good, as well. I used instant rice to decrease the cooking time. Next time I might use more rice and more cabbage to extend the dish a little.

Ground Turkey Casserole

Great and easy. I did take the advice of adding about 3/4 can of diced tomatoes with oregano and garlic. I also added salt and pepper, and a little parsley over the top.

Broccoli Beef II

Great. I did use a little more beef broth, and again added a little ginger and soy sauce to the actual beef and broccoli because it lost a lot of the taste when I discarded the marinade. Thought the noodles were a nice change, and leftovers were great. Thanks!

Delicious Ham and Potato Soup

Good, but not great. I guess my ham wasn't salty enough, because I omitted the buillion but ended up having to add a lot of salt back in. I used a combination of water, light beer, and chicken broth instead of just water, added 3/4 can of corn, doubled the onion, and added 1 cup of shredded cheddar at the end. It was definitely good and we ate all of the leftovers, but it could've used a little more flavor!

Peanut Butter Noodles

Loved this! I might try adding a tiny bit of lime juice to the sauce next time to brighten it up a little. Grilled/sauteed chicken would've been great, too. Wonderful flavor---much better than Chinese take-out!
