Chicken Nachos

This was wayyyy too dry. The chicken had a great flavor because I marinated it in a little olive oil and taco seasoning, sauteed it, and then shredded it. I think it must need much more cheese or less chips or something because ours turned out entirely too dry. We had to smother it in sour cream and salsa even to get it down, but it had a nice flavor.

Sadie's Longboy Cheeseburgers

This is one of my favorite childhood meals. We always brown the meat mixture first before filling the bread with it and just bake for a short time. We also use shredded cheddar for the top and the kids always squirted extra ketchup on the top before eating, too! Plus, my mother would always give us the bread "insides" for a snack that day!

The Best Banana Pudding

Soooo good...I did a layer of cookies, then bananas, then pudding, then cookies, bananas, and pudding on the top. Delicious!!!! Make sure to use good vanilla.

Chocolate Eclair Dessert

This has always been one of my favorite desserts. It's incredible. We use one chocolate pudding on the bottom layer and vanilla on the top. The longer it sits, the better it is!

Farfalle with Vegetable Sauce

Not great. Definitely double the vegetables. All of my veggies were a little undercooked for my taste, though, especially the fresh green beans. Not very much flavor.

Pan-Seared Chicken Breasts with Shallots

I loved this. I used thin-cut chicken breasts and browned them really well. Served over rice. Next time I might double the sauce...it's so good! I did thicken it with a little cornstarch.

Fabulous Wet Burritos

Great. Followed the recipe exactly except I put the burritos with only the meat filling in a casserole dish and covered with the sauce. Bake covered for about 20 minutes at 350 degrees, uncover, top with cheese, and bake another 5-10 minutes. Top with lettuce, tomatoes, fresh cilantro, etc. Tastes better than restaurant burritos!

Skillet Herbed Chicken with Mustard

Onion and Sausage Pizza

Really yummy-husband and I loved it! I only used 1 onion (it was a huge one!), and I hollowed out the bread halves just a little so they wouldn't overflow with toppings. Awesome!

Cheesy Potato and Corn Chowder

Good. Needed a good deal of salt (but I did use reduced-sodium chicken broth). Just spicy enough. I used red potatoes and a shredded Mexican cheese blend. Topped with extra cheese.

Amy's Garlic Egg Chicken

Wonderful. So tender and juicy and flavorful. Wouldn't recommend this if you don't LOVE garlic, though. I also used 3 egg yolks instead of 1, but I lessened the butter to about 3 T.

Awesome Slow Cooker Pot Roast

Great. I add cut up potatoes, carrots, celery and onion under the roast. Could use a bit more seasoning sometimes, but other times it has come out perfect.

Debdoozie's Blue Ribbon Chili

Wonderful and soooo easy. Only changes: I added fresh garlic with the onions and meat while browning, added only 1 can (almost 2 cups) tomato sauce, and 1 can diced tomatoes (chili spiced) with juice. I also added about 2 cups of water because it was a little thick for me. My husband spiced it up with a little tobasco (even though we used medium heat salsa). Served with sharp cheddar, sour cream, and crackers. Just better and better as leftovers are reheated!
