Quick Black Beans and Rice

Yummy, quick dish. I added red jalapenos and tabasco and there was no lack of flavor! Also, I didn't have instant brown rice, so I made the rice separately and served the bean mixture on top of the rice.

Thai Style BBQ Chicken

This was very tasty! I used about half the ginger and I think it wasn't too overpowering. I grilled the chicken on my George Foreman grill and served with brown rice. I will definitely make this again.

Texas Hash

This is a good comfort food. I used stewed tomatoes (all I had on hand), frozen corn, and brown rice. I also used shredded cheddar instead of the American. My boyfriend and I thought it was filling and yummy. I'm having the leftovers right now and they're delicious!

Asparagus, Chicken and Penne Pasta

I made a few changes to this dish and I thought it turned out very healthy and tasty. I took others' advice and only used 8 oz of pasta and it was the perfect amount. I added a can of stewed tomatoes and a cup of chicken broth to the asparagus and garlic and I grilled the chicken on my George Foreman grill before I added it to the asparagus/tomato mixture. I didn't use any oil, which cut down the fat content. It was just spicy enough for me and it wasn't too dry. I am not an asparagus lover, but I liked the taste of this dish and I will definitely make it again.

Black Bean Enchiladas

These enchiladas are wonderful! My boyfriend didn't even complain about the lack of meat! I served with a side of Spanish rice and I used chunky salsa instead of picante sauce. I will definitely make these again!

Fast and Easy French Onion Dip

I took the advice of leaving out the green onion, minced onion, salt, and pepper. So I just used the nonfat sour cream, light mayonnaise, and onion soup mix (I used Wyler's), and it turned out great! I love it so much better than any store bought dip, and it is really low in fat! I gave this 4 stars just because of the changes in the recipe. This is a new favorite. Thanks for sharing!

Broccoli With Lemon Almond Butter

I'm not a big fan of broccoli, but I loved this recipe. My boyfriend, on the other hand, loves broccoli and thought it was too lemony. So that averages out to 4 stars. I will definitely make this again, maybe with a bit less lemon juice.

Classic Greek Spinach

My boyfriend and I are not spinach lovers so we weren't expecting much from this dish, but we were pleasantly surprised. Following the advice of others, I cut way down on the oil (I only used about a tablespoon), but other than that I followed the recipe exactly. I must say that it tastes better than it looks, but not that much better. We thought this was pretty bland, but the healthiness made up for the lack of taste. Any way to get us to eat our dark leafy greens is ok by me. Overall, I gave this four stars and I will probably make it again.

Kicky Steak Strips with Rice

Magnificent! I made a few small changes - I used Dijon mustard because I had it on hand and I added a red and a green pepper with the onions and garlic. I also marinaded the meat for a few hours. It turned out great! This is one of my new favorite meals. Easy and delicious!

Thai Style Chicken Pasta

I thought this was very spicy but not very flavorful, but my boyfriend, who likes very spicy foods, really loved it. I would make this again, but maybe try adding some vegetables to give it some flavor. I served it with Oriental Green Bean Salad (from this site) which was a nice complement to this dish.

Oriental Green Bean Salad

This was a nice change of pace from regular old green beans. I served this with Thai Style Chicken Pasta (from this site) which made for a nice spicy meal. I didn't use the oyster sauce and I used frozen chopped green beans, but it still turned out great. I will make this again.

Ham and Cheese Quiche

My first quiche was a success! I used a ready made crust and I omitted the mushrooms (don't like them) and it turned out great! I used finely chopped deli honey ham, frozen spinach and low-fat half-and-half because I had them on hand. My boyfriend even liked it and took the leftovers to work today! Next time, I'll try some bacon or broccoli. What a great dish!
