Marinated Grilled Shrimp

This recipe is amazing! The four of us ate all 3 pounds of shrimp and probably could have eaten more! I usd a combo of red wine vinegar and white wine vinegar, but otherwise followed the recipe. I made extra marinade to baste the shrimp while on the grill. I will defintely make this again and again!

Grilled Tilapia with Mango Salsa

This was beautiful and delicious! I used fresh basil, but otherwise followed the recipe exactly. I grilled the fish on the George Foreman grill and it was a hit with my guests!

Garlic Chicken with Orzo Noodles

This was very good and healthy! I used frozen spinach and added a can of stewed tomatoes and some oregano. Also, I didn't have any orzo on hand, so I served this over couscous. I already have requests for the recipe!

Cheese Ball I

I find that this is way too much Cheddar cheese, and I often omit the pecans. But I just adore this cheese ball! It is always a hit at parties, and there's usually leftovers that are a great snack later on!

Pumpkin Fluff Dip

I added a bit of vanilla extract and served with gingersnaps, vanilla wafers, and graham crackers. This was a major hit at my Halloween party! Everyone was kind of surprised at how much they liked it, even non-pumpkin lovers! Update: This has become my signature dish that people request I bring! It's definitely a crowd-pleaser!

Bacon Chicken and Dumplings

Really satisfying! I used frozen corn, milk instead of half and half, and Bisquick mix. It made a huge pot full of homey deliciousness. Even the skeptics were convinced. I'll be making this again, probably with more bacon next time.

Neat Sloppy Joes

Very good! My husband was nutso for this sauce! I don't think it's bland, but it is sweet, which is what we like. I added more garlic powder, some oregano, and some Tabasco to jazz it up a bit and it came out great! I was a little apprehensive about the celery, but it cooked down and provided a little crunch without being overpowering. I will definitely make this again!

Chili Dog Casserole I

We thought this recipe was great! I made chili the day before and we just used the leftovers. I didn't put any mustard in (because I don't like it on my chili dogs), but my husband added some while he was eating it. It was the same great taste as a chili dog without all the mess on your fingers!

Lemon Pepper Zucchini

Very simple and very tasty. I'm not a zucchini fan, so this is a very good recipe for me! The zucchini was tender and very flavorful. I served this with brown rice and Simple Lemon Herb Chicken.

Cajun Style Corn Soup

This was a hit! It wasn't what I thought it would be because I don't think the corn was the major player in this soup, but it was delightful nonetheless! I use a bit extra tomato paste and I put some beef boullion in with the water to give it some extra flavor. I will make this again and again! Yum!

Jamie's Cranberry Spinach Salad

This salad was divine! I cut back on the sugar a little bit, as was suggested, and toasted the almonds and the sesame seeds on the stovetop. Just simply amazing! My mouth waters just thinking about it!

Florentine Tomato Soup

This is a wonderful soup! Half the package of spinach is the right amount for me. It tastes great with about half a pound of cooked pasta shells too. Very tasty and healthy!

Lime Chicken Picante

This was very tasty! I marinated the chicken breasts for a few hours. I also skipped making the sauce out of the extra marinade. I just sauted the chicken and then topped it with some salsa (Chi-Chi's medium is what I used). My boyfriend and I thought it was delicious!

Baked French Fries I

I was looking for an alternative to greasy fries and this is it! I had to give this 4 stars only because I changed the spices. I use only salt, pepper, and garlic powder on the potatoes and it tastes delicious! I like mine extra crispy, so I leave them in a bit longer than 45 minutes. These are wonderful! Thanks for sharing!

Easy Garlic Chicken

This is one of my favorite meals. I was looking for a way of having chicken fingers without frying them and this turned out to be a great substitute! I use a bit more garlic than called for (I love garlic), but otherwise follow the recipe exactly. They always turn out flavorful and tender. I serve with baked french fries. Very delicious! This meal has become a family favorite.

Cranberry Cream Pie II

I was unsure about how this pie would turn out, but it turned out better tasting than I expected. However, it wasn't very pretty looking, very sloppy and messy. I used a ready made graham cracker crust and I used OJ instead of water in the cranberry mixture, as another poster suggested. I let it chill for hours, but it just never got firm enough to support the weight of the cranberry mixture. Despite its messiness, it was very tasty, so maybe I'll try it again.

Ham and Cheese Quiche

My first quiche was a success! I used a ready made crust and I omitted the mushrooms (don't like them) and it turned out great! I used finely chopped deli honey ham, frozen spinach and low-fat half-and-half because I had them on hand. My boyfriend even liked it and took the leftovers to work today! Next time, I'll try some bacon or broccoli. What a great dish!

Oriental Green Bean Salad

This was a nice change of pace from regular old green beans. I served this with Thai Style Chicken Pasta (from this site) which made for a nice spicy meal. I didn't use the oyster sauce and I used frozen chopped green beans, but it still turned out great. I will make this again.

Thai Style Chicken Pasta

I thought this was very spicy but not very flavorful, but my boyfriend, who likes very spicy foods, really loved it. I would make this again, but maybe try adding some vegetables to give it some flavor. I served it with Oriental Green Bean Salad (from this site) which was a nice complement to this dish.
