Zucchini Herb Casserole
Made this cause we were heading out of town and I needed to use up a bunch of veggies in my frig. It was delish! Even my husband, who refers to himself as a carnivore, loved it. I didn't have enough zucchini so I added some carrots, used red onion cause I only had 1 green onion, added extra garlic and used white cheddar and it came out amazing. The baking dish I used was too big so unless you double it, use a small (8 by 8) pan. I served it with salmon and it was an amazing meal.

Chocolate Rum Balls I
Made these cookies according to the directions and they came out amazing!! They definitely need 2 days to sit and let the rum mellow. I tried 1 right after making them and the rum was overpowering. The second day they were better and the third day even better! If you do not have 2 days to wait for the rum flavor to mellow out, try using Kahlua instead. The Kahlua adds sweetness and doesn't leave the overpowering rum flavor. For anyone who likes a bit more booze in their food, try a dark rum. I also made a batch using Bacardi Ron 8 Anos. The rum was a little strong for the first 2 days, but on the 3rd day I liked these the best!

Best Big, Fat, Chewy Chocolate Chip Cookie
Made these for some friends and they were AWESOME! I looked throught the notes from other people first and decided to make a few modifications. First I chilled the batter before baking on the first batch so the cookies turned out perfect! Once the batter came up to room temp, the cookies got really flat in the oven.... Oops. I also used a lowfat butter and it worked fine.
