Kalua Pig in a Slow Cooker

This was so good! I did omit the saffron, because I don't enjoy saffron. I was surprised by how great this was! I don't usually cook with these flavors, and the end result was perfect.

Spartan Tri Tip Chili

We liked this! It was very spicy. If you're at all sensitive to spicy heat, I would recommend dialing back the chipotle peppers and the jalapenos. With the smoked paprika, you could even omit the chipotle peppers in adobo and still get the smoky flavor. This recipe had great flavor and the tri tip was great in this.

Pumpkin Cookies with Cream Cheese Frosting (The World's Best!)

So good! These are like eating the top of a cupcake (the best part). They go great with a cup of coffee. I did add 1/2 t. of kosher salt to the dry ingredients and I'm glad I did.

Great way to use eggplant! I did add sausage as others suggested, and added a little onion, garlic, and wine to dress up the pasta sauce. With garlic bread on the side, it was a perfect meal.

Japanese Nabeyaki Udon Soup

I liked this. I don't have a reference to compare it to, but I would make this again. I only used 14 ounces of tofu, it was all that would fit in the pot. Loved the noodles. My friend gave me fish flakes, so I made my own dashi stock. I look forward to trying more recipes like this.
