Sausage Pasta

A keeper! If you can't buy the sausage out of the casing just snip the end off the casing and squeeze it out, takes two seconds. I always use fresh spinach, just toss it in the last few minutes of cooking. It's so delicate, it's done in seconds. I find frozen strong tasting. Dot't forget fresh herbs, Yum! This recipe is a bit liquidy...hold back on your broth and add the rest as you feel you should. I love the spicy turkey sausages too! Not only is it better for you but it makes this dish pop with flavour. I rarely use pasta but change up the choice from time to time or my favouite...omit pasta and add lentils, curry and garam masala for more of a soup fashion. Fun and delicious!

Sweet and Sour Meatballs

Delicious! I like to spice up my meatballs a bit more and saute the onion with garlic before mixing into the meatballs. I always bake my meatballs to drain the fat (even extra lean)which, is great for large batches. I liked the use of cranberry jelly too. I don't own a crock pot but maybe I will soon. Thanks for the great recipe!

Classic Goulash

Excellent! Everyone likes to put their own spin on their dish...here's mine. Pre cook your pasta and omit the water. Where pasta is concerned...have fun and use different shapes and sizes. I like wortchestershire sauce but it can be an overpowering taste, I used only 1tsp. I also chopped up red and yellow peppers and a jalapeno pepper. Maybe two jalapeno's for some heat as I found one didn't add any heat at all. Serve with crusty rolls. Easy, fast and the home crew loved it! Thanks!

2-Step Skillet Chicken Broccoli Divan

Yummy! My Mom made this for the family growing up. We all licked the plates clean. Although, she made it a bit different just by adding a good curry powder, garam masala to taste and serving it over basmati rice. She always used fresh broccoli, steamed and arranged in a casserole dish, brown your bite size chicken pieces in olive oil, arrange on top of broccoli and pour over mixture. Sprinkle with grated cheese. Cook at 350 until cheese has melted and it's bubbling. 15-20min. Excellent! (always rinse your basmati rice well as they put a talcum powder on it, some say boric acid. Rinse soak, rinse soak a few times.)
