Sex on the Beach III

Awesome recipe as-is. Also played with it and made it with Citrus Vodka - YUM! Also used less Cranberry Juice...still YUM! Super easy to make individually or for a crowd :)

Speedy Chicken Enchiladas

Fast, easy, & delicious. My kids asked if I would make it again tomorrow. I made a few slight variations to the recipe - I used shredded cheese instead of the cheddar cheese soup (since I didn't have any in my cupboard), I used bean & corn salsa instead of the Thick & Chunky, and baked it at 350 for 15 min instead of microwaving (gave me time to clean up the kitchen). I also sprinkled a little garlic & herb seasoning on the chicken while cooking it. I ended up getting more than 8 enchiladas...which worked well for us! You could easily use any leftover chicken/rotisserie chicken to make this too.

Pork Dumplings

I cut this recipe in 1/2 & followed the recipe completely. LOVED them! Way better than my favorite Chinese restaurant's pot stickers! Simple to make, just took a bit to get them all steamed. I did it in 3 batches, putting the done ones in the oven on warm to keep them warm until we were ready to eat.

Heavenly Angel Food Cake

Very simple to make (I used my KA mixer)...very yummy to eat. I served with sliced strawberries on top, but ended up just wanting to eat the cake by itself because it was so good! Only change I made was I didn't use almond extract (didn't have any) so I used 2 tsp vanilla instead.

Jay's Signature Pizza Crust

Great recipe. I've never made bread, crust, dough, etc from scratch but this was pretty simple. I was able to make 2 jellyroll pan sized pizzas with the recipe & posted a pic of one of them (I was pic# 188 at the time of this review).

Exquisite Pizza Sauce

My family loved it. It was sweet yet had a bit of a kick. Unlike a previous reviewer, I thought the recipe made plenty of sauce for a good sized pizza (I made a jellyroll pan sized pizza).

Cheesy Ranch Potato Bake

WOW! I made this for a trick-or-treat potluck & nothing was left...everybody loved it. I used a 5 lb bag of red potatoes (skins left on) & used a little over 1/2 a brick of colby-montery jack & a little over 1/2 a brick of colby-cheddar cheese (I prefer shredding my own-I think it melts better). I cooked the potatoes in the oven for about an hour, then put in the crock pot with the cheeses and ranch on low while we went trick-or-treating. Everything was cooked perfectly when it was time to eat. Adding bacon bits as other reviewers mentioned would've been awesome because it reminded me of potato skins.

Oreo™ Cookie Bark

I took the advice of another & used the vanilla flavored candy coating. It turned out delicious. I think a 1/2 batch spread out in a jellyroll pan would've worked, too (I like my bark a little on the thinner side). Very easy, very good.

Vegetable Lo Mein Delight

Great recipe, I loved it! I seasoned some blsl chicken breasts with ginger & garlic & browned them up, then added veggies. I also used 1/2 soy sauce & 1/2 some other asian-type sauce I had (but that was just because I ran out of soy sauce). I used my mandolin to slice up celery, green pepper, and carrots (was emptying out the veggie drawer) which helped with the prep time. I'm planning on adding this as a regular meal I make.

Black Friday Pie

This recipe was very good. I didn't have any leftover stuffing, but decided I'd just make a box of it while it was cooking. I assembled everything else only to discover I didn't have any stuffing! So instead of the stuffing I tore up some leftover rolls & put them on top. I melted some butter, added turkey rub seasoning to the butter, then brushed it on top of the bread. During the last few minutes of baking, I added some french fried onions (to add some extra flavor since I didn't have the stuffing). I was hoping I'd get a little more solid of a "crust" with the potatoes, but it was still soft (even though the top edges were getting brown). Nice way to use up the Thanksgiving leftovers & it had lots of flavor.

Best Big, Fat, Chewy Chocolate Chip Cookie

Hands down the BEST chocolate chip cookies ever!! I used the swirl chocolate chips (milk chocolate and white chocolate) and followed the directions exactly. I've always had problems with my cookies going flat, but these cookies turned out beautifully!

Chinese Cabbage Salad I

Wonderful Recipe!!! I changed it slightly to serve more - I doubled the amount of dressing, doubled the ramen noodles, shredded a head of Nappa cabbage and used rice vinegar instead of cider (same amount of cashews and green onions). I took it to a potluck and everyone LOVED it!! Reminded me a lot of Applebee's Oriental Salad (you could add sliced chicken nuggets if you wanted more of a meal).

Crab Salad III

Great recipe! I omitted the olives and radish (personal preference) and the vinegar (didn't have any in stock); I added added cucumbers and carrots (clearing out my veggie drawer). Instead of lemon juice I used lime juice and instead of mayonaise I used Light Miracle Whip(just because of what I had in stock). I never would've thought to add lemon or lime juice or tomato to crab salad - but it's SO YUMMY! I seasoned with dill, Italian Seasoning,season salt, pepper, & garlic. I also used 1 lb of seashell macaroni, so I added more of the "dressing", more veggies, and I used (2) 8oz pkgs of chunck-style imitation crab (in the refrigerated section of the grocery store-I found mine by the pickles/lunchmeat/frozen shrimp). This recipe is definitely a keeper and great to make on a hot summer day - since you don't have to turn on your oven! Prep time wasn't too bad - while I waited for my water to boil, I started cutting up veggies, put my seashells in to boil, continued chopping and by the time my pasta was done I was done chopping. While cold water was pooring over the pasta, I mixed up the "dressing". Can't wait to make it again!

Banana Pie

Super Yummy! No leftovers in my house! I bought a box of graham cracker crumbs (instead of making my own-to save prep time). Instead of 2 boxes of banana pudding, I used 1 box of banana pudding and 1 box of french vanilla. Also, I layered as follows: graham cracker crumbs, banana slices, 1/2 of the pudding mixture, a layer of vanilla wafers, the other 1/2 of pudding mixture, another banana slice layer, then the whipped topping. I used more bananas than the recipe called for, because my family loves them! My husband said it's his new favorite dessert!
