Libby's® Pumpkin Cranberry Bread

I didn't have orange juice so I left it out and didn't have pumpkin pie spice so I substituted cinnamon and nutmeg. I've been bringing goodies for the past few weeks to work and this by far has been the favorite of everything I've brought. I'm now known as Evil Betty, as in Betty Crocker at work because I keep plying everyone with goodies.

Pumpkin Cookies V

I made these to bring into work. Everyone is raving about how good they are. They are fantastic. I do think when I make them again I will cut the recipe in half. It makes a TON of cookies. But they are so fabulous.

Big Soft Ginger Cookies

Awesome cookies. I use these to help with nausea and they're fantastic. Regular ginger snaps are like biting into concrete. These could become my newest favorite cookies.

Best Bread Machine Bread

Was very good. I made it using the timer so I didn't let the yeast soak for 10 minutes. Will try that the next time.

Skillet Bow Tie Lasagna

Was really good. I used ricotta cheese instead of the cottage cheese. I also sprinkled grated mozzarella cheese on top after serving. I did doctor it with extra spices and will probably use Italian sausage next time. But this recipe has definitely been added to the rotation. So much easier than regular lasagna.

Key Lime Cake II

The cake was very moist and definitely was very lemony, but the glaze for on top was almost too tart for my taste. I think next time I will use a little less lime juice so it's not so overpowering.
