Chocolate Covered Cherries II

I have made these for Christmas gifts two years in a row, and they turn out very well! It's worth the effort if you are a chocolate cherry lover, and it can be a fun assembly line candy to make with a friend. They really do need to sit for a couple weeks, though, to get that nice liquidy inside-- otherwise it's just a cherry wrapped in sugar paste.

Tea Punch

Delicious! The mix of juices is so refreshing, and the tea adds a nice depth that you just don't get with other punches. (I used Lipton Vanilla flavored black tea, and omitted the ginger ale.) I'm sure I'll be making this one for years to come. Thanks!

Flavored Cappuccino Mix

Well, I followed the recipe exactly, and then put the mix through a blender to get a nice homogenous texture. When I tried it (using 2-3 teaspoons of the mix, as the recipe states), it seemed really bland and watery. I added more mix, and found that 2-3 TABLEspoons makes a delicious cup. Typo? With that correction, I enjoy this recipe, and will be making it again. Thanks, Nancy!

Parmesan Broccoli Balls

These were pretty good, but my family has always made them with two 10 oz. packaged of chopped spinach and no onion, and I like those better. Also, I baked a few of these before letting them sit, and not only was the stuffing still hard, but they leaked. Letting the mixture sit is definitely a vital step.

Cappuccino in a Jar

Hmmm... this was difficult to rate. The chocolate drink mix (I used Nesquik) gave it a nice chocolate body, but overall it seemed kind of watery, and the spices were overpowering. I will probably make this again, though I will omit the nutmeg, and maybe add some powdered milk. I also ran it through a blender to get a nice homogenous texture. Thanks for the ideas, Cindy!

Cooking Light magazine's Macaroni Salad

This was ok, not great. I liked the abundance of veggies and the extras like cheese and ham, but found the dressing pretty bland. Maybe Miracle Whip in place of some of the mayo or sour cream, or some more spicy mustard. I'll probably play around with this recipe.

Taco Seasoning I

I don't know that I would say this is _exactly_ like packet mixes, but it's very close and very good! It's a little hotter, but I like that. I love knowing exactly what's in it, and I love saving money by using the spices I already have instead of buying the packets!

Lemon Ice I

I have to admit that I just used bottled lemon juice, and I don't think I'd make it that way again. This was certainly different than anything else I've ever had, and _very_ sweet! Also, it took 5 hours in the freezer (stirred every hour or so) before it was even remotely scoopable, and even then it was mushy and melted almost immediately. If I try this again, I'll use more lemon, less sugar, and start it in the morning to freeze all day.

Old Fashioned Paradise Pumpkin Pie

Absolutely sensational! I ran out of vanilla and used _maple_ extract, and WOW. Also, even though I slowly spooned the pumpkin layer onto the cheesecake layer, it still marbled; but the effect was really quite pretty. If one really wanted to keep the layers seperate, perhaps refrigerating the cheesecake layer longer would help. Overall, a new holiday favorite. I will be looking for excuses to make this. Classic Spanish Sangria

Insanely Easy Vegetarian Chili

This was the first vegetarian chili I've made, and it was better than expected. I served it over baked potatoes with shredded cheese, and my husband (a meat lover) really liked it. I won't rush to make it again, but when I'm looking to stretch grocery money with meatless entrees, this recipe will come in handy. Thanks!

Hearty Vegetable Lasagna

I was really hoping this would be better. It wasn't terrible, but we didn't really like it either. Strange and bland taste. I subbed zucchini for the mushrooms and omitted the Parmesan, but still... My husband says lasagna should have meat in it, anyway, so I think I'll keep looking for another lasagna recipe. Thanks anyway.

Slow-Cooker Pepper Steak

This was good, but it didn't wow me. The soy sauce taste was harsher than I expected. I used three colors of peppers, which made it visually appealing. Also used miced garlic instead of powder, leeks instead of onions, and diced tomatoes instead of stewed. I'll probably make it again, though I won't race to do so.

Satiny Chocolate Glaze

Maybe I'm being too picky, but while this was very good, it didn't wow me. It wasn't particularly "satiny". Just a yummy way to make a glaze of almost pure chocolate. I'm not sure whether I'll use this recipe again; I'll probably try out some others.

Grain and Nut Whole Wheat Pancakes

The best pancakes I've ever tasted! I have to admit that I goofed and used all-purpose flour instead of whole wheat, but the resulting batter was so watery that I added a lot of whole wheat flour to thicken it up. The resulting pancakes were tall and fluffy and full of nutty-grain goodness. I served these with diced fresh peaches (sugared and microwaved for about a minute to make a syrup), and it was delicious! Thank you!

Amish Macaroni Salad

WOW, was this sweet! This is ok, but far too sweet for me. My husband and I liked it combined with other "bland" recipes. I'll probably integrate this recipe with a few others to find a happy medium.
