Roasted Garlic

This recipe is great, after the oven is turned up substantially. Excellent with warm Italian bread. NOTE: Do NOT try to shortcut and microwave garlic! It may burst into flames, fill your house with smoke, and ruin your micro. Just...trust me on this.

Buffalo Chicken Pasta Salad

This salad is DELICIOUS. It warrants all caps, definitely, it's THAT good. I really hate when people make substitutions and rate a recipe that is only remotely like the original, but I admit I had to for this one, because I *loathe* green pepper. I substituted celery instead, but otherwise made according to instructions. I'm taking it to a cookout later today, but the Spousal Unit has already requested a second batch for tomorrow, just for us! Thanks for a GREAT dish. EDIT 5/22/14: I made this salad again a couple more times, but am only now getting around to updating my earlier review. The first few times I made it, I splurged for the the thick bleu cheese dressing found in the produce department (like Marie's). The salad was incredible. Once, though, I used regular bottled stuff I had in my pantry (Ken's) and was disappointed. The thin dressing soaks into the pasta and disappears after a few hours. It's definitely worth the extra money for the hearty - and calorific - dressings! Oh yeah, use Frank's Buffalo Sauce, not the Red Hot. The Red Hot is just heat. Only the Buffalo sauce will give it that authentic flavor.

Chef John's Lemon Bars

Thanks, Chef John! Oh boy, these are goooood. I've made some pretty good lemon bars in my life, but hubby and I both agree these are the best. The filling is very lemony, with a perfect balance of tartness and sweet. It set up wonderfully. I'm not 100% sold on the crust, as I tend to prefer one a bit more substantial and firm, but that is simply my preference. This crust is excellent, as long as you are aware it is more flaky than firm. Two comments, though, and both on the crust. I'd suggest mixing the salt with the flour first, then adding the butter. I also had a hard time with the finger-wetting bit. The crust kept sticking to my hands. I gave up and dusted my fingers with flour, instead. MUCH easier. EDIT 2/9/14: I made the bars yet again (I've lost count how many times now) and changed the crust a little. Same ingredients, but mixed the dry ingredients in a food processor. Pulsed in CHILLED butter cut into pieces (like pastry crust), then lightly pressed it all into the pan. It came out perfect!

Roasted Garlic

*****PLEASE DON'T SHORTCUT AND USE THE MICROWAVE!**** There is a possibility that the oil will ignite the garlic and paper towels and catch your microwave on fire. It's not common, but it DOES happen! I micro'd garlic successfully a few times, but the last time it literally exploded into flames, ruined my microwave, and filled my house with that awful burnt-garlic smell for WEEKS. Although I haven't tried this particular recipe before, I've used others like it. To be fair, I'm still rating 5 stars to avoid downgrading the rating - because roasted garlic is *awesome*.

Mushroom Rice

I really liked this! Out of necessity, I had to make a few minor substitutions, but not enough to substantially change the recipe. I didn't have the green onion, fresh mushrooms, and parsley on hand, so I used about 1/4 of a regular onion chopped up, chopped about a half a can of well-drained mushroom pieces, and 1/4 tsp dried parsley. (It was an impromptu dish and it was all I had, what's a working mom to do?). Thanks for the recipe, I'll definitely be making this again.

Angel Chicken Pasta

I made according to directions, and we all thought the dish was bland. Not BAD, just sort of boring, and the seasonings didn't seem like they went together very well. A couple sprinkles of grated parmesan cheese at the table spiffed it up all right, but I think I'd make something else next time. Sorry.

Hearty Sausage and Rice Casserole

Very tasty! The only substitution I made was using a box of rice pilaf mix instead of the white and wild rice, since that was all I had on hand. It was very good. The casserole was a little salty, though, which is odd since there is no added salt. Still, I'd definitely try this one again.

Brooke's Best Bombshell Brownies

We're a household of chocoholics. We LOVE nice fudgy brownies, but these are way over-the-top chocolate, something I didn't think was possible. Way too sweet, too... brownies ARE sweet by definition, but these are just too much. My son loved them, but even he could eat just one tiny square and asked me to save the rest for later. Hubby said 'meh'. I've got a giant pan of brownies left over. This has NEVER happened before. Nice try, but far, far overboard. Won't make again, sorry. EDIT: Downgrading from 3 to 2 stars. The next day, the rest of the pan had hardened and got crunchy. Threw it all out.

Beef Stew VI

Excellent! The only substitution I made was to use beef stock instead of water and buillion, because I don't care for bouillion cubes. The taste was EXCELLENT. The only suggestion I have for next time is to use a few less carrots and another potato or two. IMPORTANT: Add the vegetables no more than 45 minutes before serving. The hour quoted in the recipe is just too long and the potatoes get too soft and sort of dissolved.

Baked Chicken Nuggets

My husband and son thought these were very good. I thought that they were so-so. The thought of all that butter and fat made me a bit queasy and defeated my intention of making a more healthy version of frozen nuggets. Instead, I used a whole egg mixed with a bit of buttermilk for dipping the chicken. Otherwise I followed the recipe (but cutting down on the salt). I baked them on a greased baking sheet and sprayed the tops with some cooking spray instead of the butter. After baking 20 minutes on the top rack directly under the heating element, the coating was still pale and almost doughy, but the chicken was cooked through. I'm hesitant to blame the recipe, though, since it's a new range and my first experience with using a gas oven (my old one had an electric oven). We wanted crispy nuggets, so I ended up taking them out and browning them up in my electric skillet. All in all, a decent basic coating recipe with plenty of room for experimentation with spices.

Buttery Soft Pretzels

These pretzels are AWESOME. Nice and soft. I only used 1/4 c sugar, but next time I think I'll just use the full amount. They weren't too sweet at all. The dough can freeze, too. After the first rise, snip off some and wrap well in plastic. Take it out of the freezer and let defrost in the fridge, then proceed with the rolling and baking. Excellent, thanks again!

Rum or Bourbon Balls

OMG. I just made these rum balls with the intention of letting the flavor mellow for a week and serving on Christmas eve after dinner...but I don't think they are going to last that long. Even with the sharp tang of fresh rum (which, incidentally, I hate and don't drink), these doughy little balls of awesome are to die for. I haven't even sugared them yet. I had a bad moment when the chocolate seized and wouldn't combine with the rum and sugar, but I beat the heck out of it with a wire whisk and saved the day. Thank you, you've made my holiday!

MMMMM... Brownies

My son the chocoholic thought these brownies were amazing. My husband gave them an 'okay'. I thought they were good. Not great, too thick and clumpy, and most of what I could taste was just the chocolate chips, nothing else. The chocolate also seized awfully after adding it to the liquid mixture. I'll keep looking.

Ibby's Grasshopper Pie

Excellent pie, like my aunt used to make for Thanksgiving every year. If the liquor taste is a bit strong, you can add the creme de menthe to the marshmallow/milk mixture as it heats to cook off a bit of the alcohol. Thanks for a great recipe!

Lemon Lover's Pound Cake

Considering the high rating, I expected something better. The lemon flavor was far too mild for something called "lemon lovers". Very bland, texture not too great, definitely not worth the calorie count. We ended up throwing most of it out. The calculations are definitely off. This made a full Bundt pan plus 9 cupcakes!

Snickerdoodles I

Changed my rating from 4 to 5 stars after putting a slice of bread in the cookie container overnight! OMG SO GOOD, much better the next day! Very good basic snickerdoodle, just like my grandmother used to make. If you want chewy cookies, BAKE only 7 minutes and remove from the cookie sheet immediately. The cookie will look underdone, but will set up while cooling. The full 10 minutes will guarantee they are crunchy. Still yummy, but hard.
