Easy Chicken Enchiladas

Delicious. I changed it a bit, so 4*. I used 4 oz cream cheese and almost a cup of mild salsa. I left the beans out of some of the mixture and put sauteed baby bellas & brown rice in instead. I put the enchilada sauce in the bottom of the pan, as suggested, and poured the rest over the top, along with some of the rice and salsa. I put a small amount of cheese inside the wraps too. Baked for 20 minutes covered, then added the cheese to the top and baked 10-15 minutes more uncovered. My husband really liked it and he frequently has to "spice up" what I cook for his liking.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

These are scrumptious!! I filled a 1 c. measuring cup halfway with milk chocolate chips and then the rest of the way with semi-sweet and pb chips. They are so tender and delicious -- no one single flavor overpowers. A rounded tablespoon of dough makes a perfect cookie!

Apple Squares

I used half the sugar and doubled the apples (granny smith) as others have suggested. Very good texture and taste I had to taste test when they came out of the oven to make sure they were ok:)!)-- I looked at the recipe about 4 times to make sure I was not omitting liquid because of how thick the batter is. I baked them in an 8" square pan and also omitted the topping as we are planning to eat them with ice cream on top!!

Honey Of An Oatmeal Bread

This is THE BEST bread! I always just use regular all purpose unbleached flour, a heaping measure of oatmeal and 1.5 tsp of yeast. It has not yet failed me. We love this stuff fresh out of the bread maker!!

Barbequed Marinated Flank Steak

This was delectable! I marinated it for about a day and a half (because something came up the night I planned to cook it!). This was to our favor -- it really was tender and delicious. I would like to try this marinade with chicken or pork tenderloin also.

Parsley Red Potatoes

Everyone liked this -- even my most selective eater. I used olive oil instead of butter. Fresh parsley really makes a difference. I put it all in a casserole dish in a 350 degree oven for about 10 minutes before serving. Really great with steak and Green Beans with Almonds!

Green Beans with Almonds

This was delicious! I steamed fresh green beans until crisp tender and used olive oil instead of butter. Watch the almonds closely -- they burn fast!! I ended up adding some Trader Joe's Dry Toasted sliced almonds at the end to compensate for some "overdone" almonds!!

Shrimp and Quinoa

We are just venturing into more healthful eating -- did not even know what quinoa was too long ago!! This was good! I sprinkled the lime juice on at the very end (and put more on the table). I would add more asparagus and ginger next time.

Simple Baked Apples

Delicious! I used 1/4 c white and 1/4 c dark brown sugar and a mixture of apple juice and water instead of milk, also pecans instead of walnuts and craisins in place of raisins. They had a wonderful caramel sauce that developed. Everyone loved them!

No Bake Chocolate Oat Bars

I made the mistake of not reading the reviews before making these. they were greasy and bland! I ended up scraping them out of the pan, adding enough flour and another 1/4 c oats to hold them together and a bit of baking soda. I then rolled them into balls. The kids liked them this way, but I baked some of them, too, for about 10 minutes. Even without an egg added (I may do so if I make them again), they held together well and had a nice taste. The recipe as written is not worth making!

Caramel Frosting V

The only reason I gave this 4 stars was because I also added 10x sugar to get the texture I desired. Without it, it was more like a thick glaze. I garnished it with toffee bits. It is truly delicious, though, and will be made again many times!

Old Fashioned Peach Cobbler

Delicious! We used apples instead and followed others' suggestions to use 2 T cornstarch and only 1 c sugar. I omitted the oj and used 1 tsp+ cinnamon and 1 tsp apple pie spice. It was not a quick recipe, but worth it. I may try lard intead of shortening next time for a flakier crust.

Grilled Pork Tenderloin

The pork was very tender, but it was way too peppery for me. My husband loved it, but next time, I will only put a half of a teaspoon of pepper in the rub. I also coated it lightly with olive oil and let it marinate for a few hours in the fridge before grilling.

Baby Back Ribs

This is great! We made it for my parents when they were visiting and my dad raved about them! I used the dry rub and marinated the ribs for about 6 hours. I used reg. foil but triple wrapped the bottom. I baked them at 275 for 2.5 hours (because we were going away and I did not want to overcook them), checked them and baked them for .5 hours more at 300. They still were not quite tender so I kicked it up to 350 for .5 hours more and they were perfect. We grilled them for a short time with more bbq sauce until they had the crispy glaze. We used Montgomery Inn sauce -- the best! We'll use this recipe again for other rib connoisseurs in our family!!

Apple Crisp II

I used half white sugar, half brown sugar. I cut the recipe in half and used an 8" square pan, but did not cut the topping in half. I sprinkled the topping with untoasted almonds before baking. It was delicious!!

No-Bake Granola Bars

These are very tasty, but a bit dry -- I wish I had read the reviews BEFORE making them. Next time, I will add some more liquid and mix the pb in with the corn syrup/brown sugar. I am looking forward to trying some other variations as well!

Orzo with Parmesan and Basil

THIS IS AN EASY AND DELICIOUS RECIPE! CUT THE BUTTER DOWN A BIT AND ONLY SIMMER FOR ABOUT 12 MINUTES FOR AL DENTE ORZO. I OMITTED THE BASIL AND USED ABOUT A TABLESPOON OF PARSLEY INSTEAD. I ALSO OMITTED THE PEPPER AND JUST SEASONED IT WITH GARLIC SALT. MY KIDS REALLY ENJOYED IT AS A SIDE TO CITY CHICKEN!

Li'l Cheddar Meat Loaves

My family really enjoyed this. I followed the reviews and reduced the milk to 1/4 cup and seasoned it with Lawry's, garlic salt and some pepper. I also baked it for about 35 minutes before adding the topping. Since the one in the recipe had received mixed reviews, I used a different one : 1/4 c ketchup, 2T brown sugar and 1 tsp. dry mustard. I spooned this on and baked it for 10 more minutes. Even the kids liked it!
