Delicious. I changed it a bit, so 4*. I used 4 oz cream cheese and almost a cup of mild salsa. I left the beans out of some of the mixture and put sauteed baby bellas & brown rice in instead. I put the enchilada sauce in the bottom of the pan, as suggested, and poured the rest over the top, along with some of the rice and salsa. I put a small amount of cheese inside the wraps too. Baked for 20 minutes covered, then added the cheese to the top and baked 10-15 minutes more uncovered. My husband really liked it and he frequently has to "spice up" what I cook for his liking.
