Banana Crumb Muffins

YUM! We were famished so I skipped the topping except to quickly sprinkle brown sugar and cinnamon on top and toss them in the oven. The muffins were PERFECT!! Oh I did use whole wheat flour too.

Love this recipe! For lack of shortening, I used butter, and I also used whole wheat flour. Dropped by ice cream scoopfuls... DELICIOUS!

Corn and Cheddar Chowder

Turned out great! I didn't have any parsley but added about a cup of chopped cauliflower and 3 strips of cooked bacon. yum! I didn't have to simmer it more than 20 minutes myself, but that may be only because I liked the potato cut small.

Strawberry Rhubarb Cream Pie

this was VERY good. the only thing i would say is that the recipe makes way too much filling, and i had to throw some of it out. i also didnt even need to cook it 40 minutes at that temp instead of an hour. anyway it turned out excellent!

Jewish Apple Cake from Bubba's Recipe Box

YUM! I was just looking for an apple recipe that I already have the ingredients for. Having never tried a Jewish apple cake, I don't have much to compare it to, and I had to adjust it slightly for what was available to me. But here's what I did. First of all, I had a bag of McIntosh apples on hand rather than finding Rome apples. Since they are small/medium apples and not large, I used one or two extra. It came to about 6 cups once sliced and cubed. It wouldn't hurt to use more but this seemed to do the job. I didn't have enough vegetable oil so I melted some margarine spread to use instead and it worked fine. I also doubled the cinnamon and only had a 9x13 glass dish to bake it in. Since it was a different shape, it only took a little over an hour to bake. I didn't even have to use an electric mixer either. Just mixing it with a spoon worked well. It does require lots of dishes but is very tasty!

Quick and Easy Brownies

YUM! We devoured these! I only used 1 cup of flour as others suggested, because I like brownies to be less cakey and more on the gooey side (but they're still not gooey, it's a perfect balance!) I cooked mine just a little longer than 30 minutes in a glass dish and they were perfect. They look great too and are easy to frost unlike some brownie recipes. YUM YUM YUM. I'm making more for a party this weekend. :D

Good recipe, but I would cook it at a lower temp for less time. I did have to make some substitutions, but it still turned out well. First time I've made them at home, and I'm pretty satisfied.

Apple Muffins

20 min on 375 was perfect for me using whole wheat flour and double the apples. You can just fill the muffin cups and they won't make a mess with this recipe. Good muffins. :)

Cleone's Nutmeg Cookies

The first reviewer is on the spot. Lightly spiced and soft, easy to make! Just thought I would add another review that it's a good cookie. I liked it with frosting for a little kick but it is good by itself with a glass of milk. :) Made these to give to friends and family. So far no complaints. :P

Favorite Strawberry Rhubarb Pie

Good recipe! Made it for my husband and mother-in-law who had never had rhubarb pie before, and it was a success. Very easy. This is actually the "Favorite Strawberry Rhubarb Pie" recipe on the back of the instant tapioca box I bought. However, the other recipe calls for 1 cup less of each fruit (I still used 3 c strawberries but had only 2c rhubarb anyway) with the same amount of tapioca, so if you use all 6 cups of fruit as called for here, it might be too much filling and may be somewhat less congealed. 5c fruit total seemed to be a perfect amount for my pie.

Blueberry Pie

I was pretty disappointed with the outcome of this pie after all the great reviews. Even with extra cornstarch (5T) and extra sugar (1c) recommended by other reviewers, the pie turned out like soup and not very sweet. I even battled my temptations and waited overnight to cut it. I had also lowered the heat to 400 as many before me recommended and wrapped the edges in foil, but the crust was still done very early. The leftovers are still tasty for me at home, but a total mess to serve to guests... I think next time I'll try one of the recipes that uses gelatin instead of cornstarch.. or just make blueberry shortcake..
