Roasted and Curried Butternut Squash Soup

Incredible! I have made this recipe at least 5 times and t his is quite a wonderful soup - I double it and freeze some for those wintery days. I also served it at a dinner party and put a dollup of plain yogurt in the center and swirled it around with a knife - it looked VERY gourmet!

To Die For Blueberry Muffins

Flavor was great BUT they sunk in the middle and it was very difficult to get the tops off of the muffin pan without ruining the muffin shape.

Potato Salmon Patties

This is a great recipe! I used left over broiled salmon (about 1 1/2 times more than the recipe called for) and used 3 eggs instead of 2 - they were perfect! Also tried garlic butter flavored potato flakes which added good flavor without the guilt. Highly recommeded.
