DELICIOUS stuffed pepper recipe. I was worried it would be dry because of the rice, or bland because it didn't have meat but it was outstanding. And, again, very versatile.. add in whatever you like to the stuffing mix- I added chopped zuchinni, mushrooms, white onion in addition to the green onion, and used quinoa in place of rice. This is my new go-to stuffed pepper recipe for forever.
