Carol's Cinnamon Waffles

I followed this recipe verbatim, and it makes the best waffles I've ever had. I have a Black & Decker belgian waffle maker with no temp control, but a light that goes off when they're ready, and I find I have to leave them in a minute or two longer for a crispier waffle, but that is all. I was looking for a recipe for a waffle I could eat on its own without syrup or any toppings, and this was it! Wonderful, moist waffles that I can just grab to go. I brushed my non-stick iron with clarified butter instead of cooking spray, and I had no problem with sticking or burning. I'm having one right now with a coffee! I think I'd like to try them with apple or peaches! Mmmmmm! (I'm going to tweak them slightly and make them for dog treats, too! I had quite the appreciative audience while I was making them!)

Mall Pretzels

Absolutely fantastic! After reading the other reviews, I wasn't really sure what to expect, but the recipe was perfect as is. The only thing was that I only had to add 3 1/2 cups a/p flour (I didn't have any bread flour left). I also cooked them in the middle rack in a convection oven on parchment for 7 minutes, which gave them a very nice, even browning. No burnt bottoms here! And I had absolutely no problem with the dough being overly sticky. The finished product turned out deliciously perfect. I think some of the people having problems may not have enough experience with making bread products. Bread can be very finicky (altitude, ambient temperature, humidity all make a difference), and after many years of making breads, personally, I know what to look for consistancy-wise. As you're kneading the dough (exactly 8 minutes for me), it should be tacky, but not sticky (kind of like the same tackiness as the sticky side of Post-It Notes), and very smooth. They rolled out beautifully as a nice, thin rope, too. I will be using this recipe over and over again, as I LOVE soft pretzels! Thanks for posting! And for those of you that they did't work out for... try again! They're awesome when you get them right!!

To Die For Blueberry Muffins

Absolutely awesome! Nice thick batter to keep the berries from sinking, and so easy to make! The crumble topping is a very nice touch, although I only used half the mixture. I did get 8 large muffins from this recipe, and they go very well with a cup of coffee! I didn't have any problems with this recipe and I followed it exactly (although I did add some vanilla just 'cos I like it so much).

English Butter Tarts

These turned out BEAUTIFULLY!! Buttery and smooth! I'm not a fan of raisins, so I like that I could just add a few currants or even some dried cranberries instead. Lovely!!

Donut Muffins

These are absolutely AWESOME!!! I followed the recipe exactly - the only change was that I didn't have mini-muffin tins so I used 12 regular size, and I also baked them for 10 minutes in a convection oven, I also used butter instead of margarine - and they went in one sitting between my husband and I. Personally, I think it was just the right amount of nutmeg. I couldn't get enough of these, and will be making them often!! Thank you so much for posting this recipe.

Old Fashioned Apple Dumplings

Awesome recipe! I made it with my own home-made pastry, used Honeycrisp apples, replaced the white sugar with brown and added some ground clove. At first, I was a little afraid the sauce would be too sticky or make the pastry too gummy, but it turned out great! I've made it with whole apples and half apples (for slightly smaller servings). I will be making these often! Thanks so much for the recipe.

Nuts and Bolts Party Mix

This was an excellent starter recipe for me, however, I did tweak it to suit my taste. I used unsalted butter instead of oil, and only used half the recommended amount. I didn't have seasoning salt, so I just used garlic powder, onion powder, celery seed, and some added salt. I also only used pretzel sticks and Shreddies since those are my favourites and I always pick them out first. I will be using my tweaked recipe again!

J.P.'s Big Daddy Biscuits

After finding this recipe, I have used no other! I LOVE that it doesn't use baking soda, and therefore I find them much lighter without being "dried out." I honestly don't know how people ended up with very dense or doughy results, I have never had that problem. I also love using this as a basic recipe, tweaking it slightly if necessary (like a bit extra sugar for sweeter scones), and then adding things like pumpkin or blueberries, or even making a batch of cheese and bacon! As with some of the other reviews, I would recommend NOT kneading very much - just until it becomes handleable. Personally, I roll it out into one circle, about 1/2 - 3/4 inch thick, and then cut it into 6 or 8 wedges (depending on how big you want them). These are awesome!! Thanks for posting the recipe!!
