Oranged Cranberry Sauce

This was a great recipe! I didn't have cinnamon sticks so I substituted ground cinnamon to taste. Be patient and give it plenty of time to thicken when you cook the cranberries. My roommate said it tasted a lot better than the old canned stuff. I'll definitely make this again for Thanksgiving!

Chicken Pasta Salad II

This salad tastes great! I made a few adaptations because I didn't have mushrooms or shredded cheese. I had mini bow-tie pasta on hand so I used that. Very tasty dressing! I'll make this again.

Green Pea Salad With Cheese

As I started to prepare this salad, I discovered to my horror that we were out of cheese!! I decided to make it anyway and it was sooooo good that I can't wait to make it again after I've bought Cheddar cheese. I used Miracle Whip because that's what we keep on hand.

Jim's Macaroni Salad

I made a few substitutions according to taste and what I had on hand: omitted the eggs, added a can of tuna, used green onions, sweet pickles and cubed Cheddar cheese. Also I didn't have cider vinegar so I used red wine vinegar. Although these seem like substantial changes, the salad was terrific and I bet it would be great as the recipe was written, too.

Red Bean Salad with Feta and Peppers

I used garbanzo beans, doubled the lemon juice and olive oil, and added ground black pepper. This salad is cool, crunchy and so tasty! I'll definitely make it again. I'm looking forward to eating the leftovers tomorrow.

Delicious Cranberry Sauce

I just made this and I think it tastes great! I had to make an adjustment because I cannot have oranges or OJ. So I made it with a cup of water, added the zest of 2 small tangerines, and the juice of 2 tangerines. I probably should have used a little less than a cup of water, but there wasn't really much tangerine juice. The cinnamon I have is Saigon cinnamon, which is pretty strong, so the sauce is pretty "cinnamon-y." But I like it!

Southwestern Rice and Bean Salad

Made this salad tonight, but with some changes due to what I had on hand. I used seasoned black beans (didn't rinse) because I didn't have kidney beans; chopped white onion instead of green onions; and I was out of corn. Chose Zesty Italian dressing, for extra spark and I used salsa instead of picante sauce. I couldn't stop eating it and it hadn't even chilled yet! I can't wait to try it tomorrow when it's cold.

Peanut Butter Noodles

Wow, are these good! Made this morning. I used ramen noodles and I couldn't find on the pkgs. I should have at least doubled the sauce! I'll make more sauce for the rest of the noodles. Subbed sweet chile sauce for the hot chile paste. Didn't have peanuts to add on top. Also added shredded carrots for some color. I'll definitely make this again, probably using angel hair pasta.

Moroccan Tagine

I had to make some modifications because of what I had on hand. Sweet pototoes instead of butternut squash, light red kidney beans and great northern beans as well as garbanzos because I had no chicken. I added generous shakes of cinnamon and cumin, as well as greshly-ground mixed peppercorns. I added raisins as well. I thought it was quite good, and it's a pretty adaptable recipe. I'll make it again.
